Tamale Casserole

Great way to use up leftover taco meat!
- 1 lb ground beef, browned
- 1 pkg taco seasoning mix
- 1 C. water
- 1 C. Salsa
- 1 pkg. corn bread muffin mix
Spinach Bread Dip

In a large bowl combine soup and sour cream
- 1 pkg vegetable soup mix
- 16 oz sour cream
- 1 box frozen spinach, thawed
- 2 loaves of round peasant bread
Chicken Reuben

1.Turn on broiler, with rack 4 inches from the heat
- 8 slices rye bread
- 4 ounces sliced Swiss cheese
- 1 pound (1 jar or package) sauerkraut, drained and squeezed dry (not rinsed)
- 1/3 cup light mayonnaise
- 2 tablespoon ketchup
Herbed Spiced Nuts

Preheat oven to 350 degrees
- 2 T vegetable oil
- 1 tsp dried thyme, crumbled
- 1 tsp salt
- 1/2 tsp cayenne
- 2 cups assorted nuts-walnuts, pecans, hazelnuts, and natural almonds
Chili Cheese Puffs

This is a nice dish for brunch with sausage or ham
- 5 eggs
- 1/4 cup all purpose flour
- 1/2 tsp baking powder
- 1 cup cottage cheese
- 2 cups shredded monterey jack cheese
- 1/4 cup butter
- 1 can chilies, chopped and drained
Lemony Lima Beans with Parmesan

This salad is great for a picnic, or it can be served as a side for lunch or dinner
- Coarse salt and ground pepper
- 2 packages (10 ounces each) frozen baby lima beans, unthawed
- 3 tablespoons olive oil
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/3 cup shaved Parmesan cheese (1 ounce)
White Bean Hummus DIp

Can be made up to 3 days ahead and stored in the refrigerator
- 1/4 cup chopped green onions
- 2 T fresh lemon juice
- 2 T tahini
- 1/2 tsp dried oregano
- 1/4 ground cumin
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1 (19 oz) can cannellini beans or other white beans, rinsed and drained
- 1 garlic clove, peeled
Ultimate Cheese Ball

soften the cream cheese and then add the the sharp cheese spread, chopped green onions,chopped buddig beef
- 8 oz cream cheese
- 1 bunch of green onions
- 4-6 oz of sharp cheddar cheese spread
- 2 oz of budding beef
- Top
- 1/2 cup of pecans chopped
- use with ritz crackers
Grilled Marinated London Broil

Make marinade: Mince and mash garlic to a paste with salt and in a blender blend with remaining marinade ingredient...
- 5 large garlic cloves
- 1 tsp garlic cloves
- 1/4 cup dry red wine
- 1/4 cup balsamic vinegar
- 1 T soy sauce
- 1 tsp honey
- 1 1/2 lb top round London Broil at least 1 inch thick.
Limeade

In a small saucepan, combine 1 cup water and sugar
- 1 cup sugar
- 1 cup fresh lime juice (about 8 limes)
- 1 quart seltzer water
- ice cubes
- lime slices for garnish, optional
