Martha Stewarts Mac and Cheese 101

- 8 T. unsalted butter, plus more for casserole
- 6 slices good white bread, crusts removed, torn into 1/4 to 1/2 inch pieces
- 5 cups milk
- 1/2 cup all-purpose flour
- 2 tsp salt, plus more for water
- 1/4 tsp freshly grated nutmeg
- 1/4 tsp freshly ground black pepper
- 1/4 tsp cayenne pepper
- 4 1/2 cups grated sharp white cheddar cheese
- 2 cups grated Gruyere or 1 1/4 cup grated Pecorino Romano Cheese
- 1 pound elbow macaroni

- 1 can (28 ounces) whole tomatoes in puree
- 1 jalapeno chile (ribs and seeds removed, for less heat), minced
- 2 small onions, chopped
- 3 garlic cloves (2 whole, 1 minced)
- coarse salt and ground pepper
- 1 can (19 ounces) black beans, rinsed and drained
- 1/2 cup yellow cornmeal
- 1 cup shredded pepper Jack cheese
- 1 teaspoon ground cumin
- 4 large poblano chiles, halved lengthwise
Egg Salad Sandwiches

In a medium bowl, whisk together mayonaise, mustard and vinegar until smooth
- 1/2 cup light mayonaise
- 2 tsp Dijion Mustard
- 1 tsp white-wine vinegar
- 8 hard cooked eggs, peeled nd roughly chopped.
- 1 celery stalk, minced
- 1/4 small red onion, minced
- coarse salt and ground pepper
Tomato Salsa

Mix all ingredients together in a glass bowl except for juice
- 3 medium tomatoes
- 1 medium onion,;diced
- 2 gloves garlic; minced
- 2 tsp olive oil
- 1/2 cup cilantro; diced
- 1/2 tsp cumin
- 2 jalapeno peppers; diced
- 1/2 lime juice
Almond Butter

You can substitute any kind of nut in this recipe
- 1 cup almond
- 2 teaspoons vegetable oil
- Salt to taste
Beer Biscuits

If you use a fruit flavored beer you can omit the sugar
- 2 1/4 cups all-purpose baking mix (See recipe for baking mix)
- 2 tablespoons sugar
- 1 cup beer
Cream Cheese Bars

Preheat oven to 350 degrees
- 2 pkg cresent rolls
- 2 8oz cream cheese
- 1 egg separated
- 1 cup sugar
- 1 tsp vanilla
Chickpea Saute with Garlic and Olives

In a medium saucepan, cook the onion in the olive oil, stirring, over medium heat for 2 minutes
- 1/2 red onion, chopped
- 1/2 tablespoon olive oil
- One 16-ounce can chickpeas, rinsed and drained
- 1/2 teaspoon dried thyme
- 1/4 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 5 or 6 kalamata olives, pitted and halved
