Preparation 1. Bring the water to a boil in a small pot
- Ingredients
- i cup water
- 1/3 cup millet
- 1/4 cup onion, chopped
- 1/4 cup red bell pepper, chopped
- 1/4 cup carrots, chopped
- 1 garlic clove
- 2 tablespoons olive oil
- 1/2 teaspoon Italian seasoning
- 1 egg, beaten
Penang Hokkien Mee(Prawn Noodle Soup)

While Hokkien Mee is made famous by Penang hawkers, it originated from the Fujian province in China
- Stock ingredients:
- 1 1 1 ziploc bag of shrimp heads and shells (I used Ziplock Easy Zipper Bag)
- 15 15 to 12-13 of water (reduced to about 12-13 cups of water after hours of boiling and simmering)
- 2-3 2-3 to pieces of rock sugar (about the size of a small ping pong ball) or to taste
- 1.5 1.5 1.5 lbs of pork ribs (cut into pieces)
- to to taste
- Chili Paste:
- 30 30 to dried chilies (seeded and soaked to soften)
- 10 10 10 shallots (peeled)
- 5 5 5 cloves garlic (peeled)
- 2 2 2 tablespoons of water
- 6 6 6 tablespoons of cooking oil
- 1 1 1 pound of yellow noodles (scalded)
- 1 1 1 pack of rice vermicelli (scalded)
- Some kangkong or water convolvulus (Water Spinach) scalded
- Some bean sprouts (scalded)
- Toppings:
- 1/2 1/2 1/2 pound of lean pork meat (boiled and sliced thinly)
- 1/2 1/2 1/2 pound shrimp (shelled and deveined)
- 6 6 6 hard-boiled eggs (shelled and quartered)
- Some fried shallot crisps (store-bought)

- 4 tbsp. (1/4 cup) unsalted butter, room temperature
- 3 tbsp. minced chives, divided
- 1/2 small shallot, minced (1 tbsp.)
- 1 small garlic clove, minced
- kosher salt
- Black pepper
- 1 tsp. Dijon mustard
- 2 tbsp. red wine vinegar
- 1/4 c. extra-virgin olive oil
- 2 tbsp. finely chopped parsely
- 2 tbsp. finely chopped basil
- 2 scallions, halved lengthwise, white and light green parts thinly sliced (1/4 c.)
- 2 10 oz. NY strip steaks, halved
Vegetarian Stir-Fried Millet

This stir-fried millet with seasonal vegetables is comforting, delicious and filling
- 1 cup millet, rinsed
- 3 cups water
- 1 teaspoon sea salt
- 3 carrots, sliced into ribbons with a vegetable peeler
- Handful of asparagus, tough ends snapped off and sliced into 2-inch pieces
- 1 tablespoon or more of peanut or vegetable oil
- 1 tablespoon toasted sesame oil
- 2 eggs, beaten
- 1/2 inch fresh ginger, skin removed and finely chopped or grated through a Microplane
- 2 cloves garlic, minced or pressed
- 1/2 cup or more sliced green onions
- 1 tablespoon shoyu(Japanese soy) sauce, or regular soy sauce if you cant find shoyu

In medium-sized non-metallic baking dish, whisk together fish sauce, ¼ cup lime juice, and garlic
- 1/4 c. Asian fish sauce
- Juice of 3 limes (1/4 c. and 2 tbsp), divided
- 2 garlic cloves, minced
- 2 8 oz. chicken breasts, halved lengthwise (4 cutlets)
- 1/2 c. rice vinegar
- 1 tsp. sugar
- kosher salt
- 1/2 cucumber, halved lengthwise and very thinly sliced (1 1/4 c.)
- 1 medium carrot, peeled and julienned (1 1/4 c.)
- 1 small jalapeno, sliced
- 1/4 head of red cabbage, thinly sliced (1 1/2 c.)
- Dash of sesame oil (optional)
- 1/3 c. mayonnaise
- 1/4 c. sriracha
- Black pepper
- 1 c. cilantro sprigs
- 1 fresh baguette, halved lengthwise and cut into 4 equal pieces (toasted, if desired)

- 8 ounces dried soba noodles
- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons mirin
- 1 tablespoon unseasoned rice vinegar
- 1/2 teaspoon toasted sesame oil
- 1 teaspoon sugar $
- 1 English cucumber, halved and sliced $
- 1 medium carrot, cut into 2-in. matchsticks $
- 1 chunk daikon (about 6 oz.), cut into 2-in. matchsticks
- 1 red bell pepper, halved and sliced thinly $
- 1 yellow bell pepper, halved and sliced thinly $
- 4 green onions, sliced diagonally

This traditional Brazilian recipe is fairly easy and quick to make and everyone has it's own version
- Ingredients:
- Serves 6
- 1.5 pounds tender steak, any visible fat trimmed, cut into small cubes
- 4 tablespoons olive oil, divided
- 1 medium onion, finelly chopped
- 2 garlic cloves, minced
- 1/2 cup brandy or cognac, equally divided into 2 1/4 cup portions
- 1 small can tomato paste
- 1 tablespoon good quality beef base
- 2 tablespoons brown sugar
- 1/4 cup ketchup
- 1 cup water
- 6 oz white mushrooms, sliced
- 2 tablespoons fresh rosemary, finely chopped
- 1 can of Media Crema (table cream)
