Ajiaco (Colombian)

The soup is served along with a generous fixin's bar: shredded chicken breast, tangy sour cream for richness, caper
- 2 quarts homemade chicken stock (or low-sodium canned stock)
- 1 whole bone-in, skin-on chicken breast, split (12 to 16 ounces total)
- 1 large onion, split in half
- 2 bay leaves
- 2 pounds russet potatoes (about 2 medium) peeled and cut into rough 1-inch chunks
- 2 pounds papas Criollas (about 20 potatoes), peeled
- 1 pound Red Bliss potatoes (about 2 small), peeled, split into quarters lengthwise, and cut into 1/2-inch slices
- 1/4 cup dried guascas ( If unavailable, replace with an extra 2 bay leaves (remove along with other bay leaves in step 2), plus 2 tablespoons of fresh chopped parsley leaves.)
- 2 ears corn, shucked and broken into 3 pieces each
- 1 small onion, finely diced (about 3/4 cup)
- 2 tablespoons chopped cilantro
- 1 serrano or 1/2 jalapeño chile, seeded and finely minced
- Kosher salt and freshly cracked black pepper
- 1/2 cup sour cream, thinned with 1 tablespoon milk
- 1/2 cup capers, rinsed, drained, and roughly chopped
- 1 ripe avocado, preferably smooth, light-green fuerte variety, sliced into wedges

1. In saucepan combine boiling water, cracked wheat, and millet; simmer, covered for 5 minutes

- 2 3/4 cups All-Purpose Flour
- 1 cup sugar
- 1 1/4 teaspoons salt
- 1/2 teaspoon baking soda
- 1 cup lard or vegetable shortening*
- 1 1/2 teaspoons vanilla extract
- 2 1/4 teaspoons almond extract
- 1 large egg + 1 large egg yolk
- 1/4 cup whole blanched almonds
- Chocolate & nut topping, optional
- 1 1/4 cups semisweet chocolate chips
- 1/3 cup butter
- 1 teaspoon vanilla extract
- 2 tablespoons corn syrup
- 1 cup finely chopped toasted almonds
Amaranth Maple Cornbread

1. Preheat oven to 400 degrees
- 2 cups Cornmeal, Fine Grind
- 1 1/2 cups White Flour, Unbleached
- 1 cup Organic Amaranth Grain
- 1 1/2 tbsp Baking Powder
- 1/2 tsp Sea Salt
- 1 cup Buttermilk
- 2/3 cup Maple Syrup
- 1 tbsp Canola Oil
- 2 Eggs
- 2 tbsp Pecan Halves
Red Curry Shrimp Dumplings

For the cooking part, I simply boiled the red curry shrimp dumplings and eat them
- 8 oz shelled and deveined shrimp
- 2 teaspoons red curry paste
- 2 teaspoon fish sauce
- 1 teaspoon cornstarch
- A little egg white
- Cilantro leaves, roughly chopped
- Dumpling wrappers
- Water, for wrapping
Ojingeo Bokkeum (Korean Spicy Stir-fried Squid)

Clean the squid (see below)
- Sauce:
- 1 medium size squid (about 14 ounces or 400 grams)
- 1/2 medium carrot
- 1/2 medium onion
- 1/2 medium zucchini
- 1 green chili pepper (or 1/4 green bell pepper)
- 1 red chili pepper (or 1/4 red bell pepper)
- 2 scallions
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
- 2 tablespoons Korean chili pepper paste (gochujang)
- 1 tablespoon Korean chili pepper flakes (gochugaru)
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 tablespoon minced garlic
- 1 teaspoon minced ginger
- 1 teaspoon sesame seeds
- pinch black pepper
- Combine all of the sauce ingredients in a small bowl.

- 1 Small onions chopped
- 1 tsp Hing(giant fennel)
- 1/2 to 3/4 cup Grated coconut
- For Seasoning
- 2 tsp Coconut oil
- 1 tsp Mustard seeds
- 2-3 Curry leaves
- Salt to taste
- For garnish
