This dough is very wet and sticky, so flour the counter and baking sheet generously
- 1 cup water, heated to 110 degrees
- 3 tablespoons granulated sugar
- 1 tablespoon instant or rapid-rise yeast
- 3 cups (15 ounces) all-purpose flour
- 3/4 teaspoon salt
- 2 large eggs
- 2 tablespoons plus 2 quarts vegetable oil

Beef Rendang (Rendang Daging

1)Chop the spice paste ingredients and then blend it in a food processor until fine
- Spice Paste:
- 1 1/2 pound boneless beef short ribs (cut into cubes)
- 5 tablespoons cooking oil
- 1 cinnamon stick (about 2-inch long)
- 3 cloves
- 3 star anise
- 3 cardamom pods
- 1 lemongrass (cut into 4-inch length and pounded)
- 1 cup thick coconut milk
- 1 cup water
- 2 teaspoons tamarind pulp (soaked in some warm water for the juice and discard the seeds )
- 6 kaffir lime leaves (very finely sliced)
- 6 tablespoons kerisik (toasted coconut)
- 1 tablespoon sugar/palm sugar or to taste
- Salt to taste
- 5 shallots
- 1 inch galangal
- 3 lemongrass (white part only)
- 5 cloves garlic
- 1 inch ginger
- 10-12 dried chilies (soaked in warm water and seeded)
Thai Chicken Pizza

Directions The evening before you want to make the pizza, you are going to make an overnight starter
- Overnight Starter
- 1 * 1 cup King Arthur White Whole Wheat Flour
- * small pinch of instant yeast
- 1/2 * 1/2 cup cool tap water
- Dough
- * all of the overnight starter
- 1 1/4 * 1 1/4 cups cool water
- 2 1/2 * 2 1/2 cups King Arthur White Whole Wheat flour
- 1 1/2 * 1 1/2 teaspoons salt
- 3/4 * 3/4 teaspoon instant yeast
- Thai Chicken Topping
- 1 * 1 large boneless, skinless chicken breast
- 1/3 * 1/3 cup Thai Fish Sauce (available in the international food section of your grocery store)
- * juice of 1 lime
- 1/4 * 1/4 cup packed brown sugar
- 1 * 1 teaspoon Thai chili garlic paste
- 1/2 * 1/2 cup Thai spicy peanut sauce
- 1 * 1 small bunch scallions, chopped
- 1 * 1 cup shredded mozzerella cheese, or pizza cheese blend
- 1/4 * 1/4 cup chopped fresh cilantro

- 3/4 cup (95 g) cake flour (or make your own - see below)
- 2 Tbsp. (25 g) sugar
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. (6 g) green tea powder (matcha)
- 1 large egg, beaten
- 1/3 cup (80 ml) milk
- 2 Tbsp. (35 g) butter, melted
- 1 Tbsp. honey
- For the Chocolate Glaze
- 1/4 cup chocolate chips (I use semi sweet chocolate chips, but white chocolate goes well too!)

- Ingredients:
- 2 servings
- 12 - 14 ounces fresh jajangmyeon/udon noodles
- 3 ounces fatty pork, thinly sliced
- 1 thumb-size ginger piece, julienned
- 2 scallions, cut into 2 inch lengths
- 1 tablespoon Korean chili pepper flakes (gochugaru) (adjust for your liking)
