Roasted Cauliflower and Mushrooms

Heat oven to 350F. Spray rectangular baking dish, 13x9x2 inches, with nonstick cooking spray
- 1 lb. cauliflower flowerets, (3 cups)
- 1 cup mushrooms, chopped
- 1/2 cup red onion, chopped
- 1 tablespoon olive oil (or vegetable oil)
- 2 teaspoons lemon juice
- 2 teaspoons balsamic vinegar (or cider vinegar)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cloves garlic, finely chopped
- 1/3 cup green onions, chopped

- 4 ounces light cream cheese
- 2 tablespoons finely chopped onion, 2 to 3 inches long
- 4 oz. Cheddar Cheese 50% less fat
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried parsley
- 1/4 cup egg substitute
- 1 tablespoon skim milk
- 2/3 cup seasoned bread crumbs
Cheeseburgers with Grilled Onions 7pts

- 1 pound uncooked lean ground beef , (with 10% fat)
- 1 clove garlic clove, minced
- 1/4 teaspoon table salt
- 1/8 teaspoon black pepper
- 1/4 cup low-fat shredded cheddar cheese, sharp-variety ( I use Cabot 50% less fat)
- 1/2 small red onion, cut into 4 thin slices
- 1/2 teaspoon olive oil
- 1/8 teaspoon dried oregano, crushed
- 4 whole reduced-calorie hamburger rolls
- 1 small small tomato, cut into 8 thin slices

1. Remove Stems from mushrooms to make a pocket
- 16 large mushrooms, whole
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 3 ounces cooked ham, finely chopped
- 1/2 cup seasoned bread crumbs, the dried kind
- 1/4 cup egg substitute, (or 2 eggs)
- 2 tablespoons grated parmesan cheese
- 1 tablespoon fresh parsley, finely chopped
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt, or a little more
- 1/4 teaspoon freshly ground pepper, or a little more
