SQUASH CASSEROLE

Preheat oven to 350 degrees
- 6 cups diced yellow squash and zucchini
- vegetable oil
- 1 large onion chopped
- 4 tablespoons butter
- 1/2 cup sour cream
- 1 teaspoon House seasoning
- (1 cup salt, 1/4 cup black pepper, 1/4 cup garlic powder)
- 1 cup grated cheddar cheese
- 1 cup crushed butter crackers
PEANUT BUTTER CHOCOLATE CHIP COOKIES

Cream butter, peanut butter, and sugar at medium speed of electric mixer until light and fluffy
- /3 cup butter or margarine softened
- 1/2 cup crunchy peanut butter
- 3/4 cup firmly packed dark brown sugar
- 1 egg
- 1/3 cup milk
- 1/2 teaspoon vanilla extract
- 2-1/4 cups all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup semisweet chocolate mini morsels
SWEET-TART LEMONADE

Stir together all ingredients until well blended, serve over ice
- Sugar Syrup:
- 3 cups cold water
- 2 cups sugar syrup
- 1-3/4 to 2 cups fresh lemon juice
- 2 cups sugar
- 1 cup water
- 1/4 teaspoon fresh lemon juice
CHOCOLATE ROLL WITH CREAMY PRALINE FILLING

Preheat oven to 375 degrees
- Filling:
- 2/3 cup sifted cake flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 squares (1 oz. each) unsweetened chocolate
- 4 eggs
- 2/3 cup sugar
- 1 teaspoon vanilla
- 2 tablespoons sugar
- 1/4 teaspoon baking soda
- 3 tablespoons cold water
- Praline filling
- Chocolate fudge frosting
- Chopped pistachio nuts
- 1/4 cup sugar
- 1/4 cup toasted slivered almonds
- 1 cup heavy cream
- Frosting:
- 2 squares unsweetened chocolate
- 1/4 cup (1/2 stick) butter or margarine
- 3-3/4 cups confectioners sugar
- 1/4 cup milk
- 1 teaspoon vanilla
APPLE CIDER VINAIGRETTE

Process all ingredients in a blender or food processor until smooth
- 3/4 cup vegetable oil
- 1/3 cup apple cider vinegar
- 1/3 cup firmly packed brown sugar
- 1 teaspoon celery salt
- 3/4 teaspoon dry mustard
- 1 tablespoon grated onion
ORANGE SESAME CHICKEN AND VEGETABLE STIR FRY

Toast sesame seeds in large nonstick skilled over medium heat
- 2 tsp. sesame seeds
- 2 large boneless skinless chicken breasts halves cut into chunks
- 1 tablespoon cornstarch
- 2-1/2 teaspoons vegetable oil
- 1 lb. bunch bok choy, stalks and leaves cut in half lengthwise then in pieces crosswise leaves and stalks separated
- 2 small bell peppers cut in strips
- 1/3 cup each bottles stir-fry sauce
- orange juice and water
- 1 teaspoon grated orange peel

- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups powdered sugar
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon ground cinnamon
- Pinch ground nutmeg
- 1 tablespoon cornstarch
- Oil, for the iron
- Special equipment: Waffle cone iron; wooden cone-form
SMOKED PORK

Soak wood in water 1 hour
- Hickory wood chunks
- 2 cups prepared mustard
- 1-1/2 cups ketchup
- 3/4 cup cider vinegar
- 2 tablespoons sugar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon hot sauce
- 2 tablespoons butter or margarine
- 1 5-6 lb. butt pork roast
- 5 garlic cloves chopped
- 2 tablespoons salt
- 1 tablespoon pepper
SPICY CHICKEN FINGERS

- Creamy Green Salsa:
- 2 lbs. boneless chicken breasts cut into strips
- 3/4 cup milk
- 2/3 cup masa meal or cornmeal
- 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons dried parsley flakes
- 1 tablespoon dried whole oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 - 1/2 teaspoon red pepper
- 3/4 cup all-purpose flour
- 1/2 teaspoon black pepper
- Creamy green salsa
- 1/2 cup sour cream
- 1/3 cup mayonnaise or salad dressing
- 1/3 - 1/2 cup commercial green salsa
- 1 tablespoon lemon juice
- 1/8 teaspoon chili powder
VANILLA ICE CREAM

- 1-12 oz. can evaporated milk
- 1 (8 oz.) container frozen whipped topping, thawed
- 1 small package vanilla instant pudding mix
