Combine sugar, flour, butter or margarine, salt and egg yolks
- 1 cup sugar
- 1/4 cup flour
- 1/4 cup butter or margarine melted
- 1/8 teaspoon salt
- 2 eggs separated
- 2 lemons, juice and grated peel
- 1 cup milk
- 1 9" unbaked pie shell
ROASTED PORTOBELLO WITH CARAMELIZED ONION RAVIOLI

Filling #1: For Filling #1: Preheat oven to 400 degrees
- Filling #1:
- 1 tablespoon olive oil
- 1 large white onion diced
- 1 tablespoon minced garlic
- 1 pound portobello mushrooms cubed without stems
- 1/2 cup chicken stock
- Salt and pepper, to taste
- 1 tablespoon fresh chopped parsley
- Additional salt and pepper, to taste
- Additional olive oil
- Filling #2:
- 2 small eggplants
- Olive oil and bread crumbs, to coat
- Salt and pepper, to taste
- 4 ounces shredded fresh or processed mozzarella cheese
- 1 tablespoon Romano cheese
- 1 tablespoon tomato paste
- 1 whole egg
- Olive oil
- Ravioli Dough:
- 2 eggs
- 2 cups semolina flour
- Warm water
- Olive oil
- Pot of water
- 1/2 tablespoon salt
- Spinach Cream Pesto Sauce:
- 10 ounces wilted spinach
- Olive oil
- Salt and pepper, to taste
- 1/4 cup heavy whipping cream
PORK TENDERLOIN WITH MAPLE GLAZE

Rub pork tenderloins all over with crumbled dried sage, sprinkle with salt and pepper
- 2-12 -14 ounce pork tenderloins
- 2 teaspoons crumbled dried sage leaves
- 1 tablespoon butter
- 6 tablespoons pure maple syrup
- 6 tablespoons apple cider vinegar
- 2 teaspoons dijon mustard
AUNT KITTY’S LEMON PIE

Line pastry shell with aluminum foil and fill with pie weights or dried beans
- 1 unbaked 9” pastry shell
- 1-1/2 cups sugar
- 1/3 cup butter or margarine softened
- 3 large eggs
- 1 tablespoon grated lemon rind
- 1/4 cup fresh lemon juice
- 1/4 teaspoon salt
- 1/2 teaspoon lemon extract
CORN CAKES

Place cornmeal, flour and sugar in a bowl and mix together
- 1 cup roasted cornmeal (fine ground yellow cornmeal)
- 1 cup self-rising flour
- 4 tablespoons sugar
- 2 eggs
- 2 cups buttermilk
- 3 ounces corn oil
- 2 cups fresh corn kernels
BREAKFAST CASSEROLE

Brown sausage and 2 tablespoons of chopped onion together until done
- 1 lb. sausage
- 1 bag simply potatoes hash browns
- pepper to taste
- 2-3 cups shredded mild cheddar cheese
- 5 eggs beaten
- dash of pepper
- 1 large onion chopped
- seasoning salt to taste
- 1/2 teaspoon onion powder
- 1 small jar sliced mushrooms
- dash of salt
- 3 tablespoons milk
MACARONI BEEF CASSEROLE

Tomato Sauce: Mix and cook 1-2 hours
- Tomato Sauce:
- 1 lb. ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 small can mushrooms
- 1 (28 oz.) can diced tomatoes
- 1 teaspoon salt
- 1 teaspoon garlic salt
- 1-8 oz. box elbow macaroni
- 2 cups shredded cheddar cheese
- Extra sauce if desired
- 1 large onion simmer in water and chicken bouillon
- Add 1 large can diced tomatoes
- 2 (12 oz. cans) tomato paste plus 3 cans water
- 1 can mushrooms
- 1-1/2 teaspoons oregano, marjoram, basil and one beef bouillon
- 1 tablespoon sugar, garlic salt
- 2 tablespoons parmesan cheese

PARTY CHEESE WREATH

- 2-8 oz. packages cream cheese, softened
- 1 package milk cheddar cheese
- 1 tablespoon chopped red pepper and finely chopped green pepper
- 2 tablespoons Worcestershire sauce
- 1 teaspoon lemon juice
- Dash ground red pepper
CORN MUFFINS

- 1 cup plus 2 tablespoons yellow cornmeal
- 1 cup all purpose flour
- 2/3 cup sugar
- 1 tablespoon baking powder
- Coarse salt
- 1/4 cup oil
- 4 tablespoons unsalted butter, melted
- 2 tablespoons mild honey
- 2 large eggs, lightly beaten
- 1 cup whole milk
