PORK SCALOPPINE AND TOMATO BASIL SAUCE

Stand pork pieces on end between two layers of plastic wrap
- 1 pork tenderloin cut into 4 pieces crosswise
- 1 tablespoon olive oil,
- Coarse salt and freshly ground pepper
- 1 shallot minced
- 1 tablespoon cognac
- 1/4 cup chicken stock
- 1 tablespoon grainy mustard
- 3 tablespoon heavy cream
- 2 tablespoons finely chopped plum tomato
- 1 tablespoon finely chopped basil
LAMBROPSOMO BUNS

In small mixer bowl, combine 1 cup flour and the yeast
- 2-1/2 -3 cups all purpose flour
- 1 package yeast
- 1/3 cup milk
- 1/3 cup water
- 1/4 cup sugar
- 2 tablespoons butter or margarine
- 1 teaspoon finely shredded orange peel
- 1/2 teaspoon salt
- 1 egg
- 1 slightly beaten egg white
SWISS DIP

Soften cream cheese then add mayonnaise, Swiss cheese and green onion
- 1 package (8 ounces) cream cheese
- 1/2 cup mayonnaise
- 1 cup grated Swiss cheese
- 4 tablespoons chopped green onions
- 8 slices bacon, cooked and crumbled
- 1/2 cup Ritz crackers crushed
- Additional crackers or mini slices of French bread
CHEWY CHOCOLATE COOKIES

Cream butter or margarine and sugar in large mixer bowl
- 1-1/4 cups butter or margarine, softened
- 2 cups sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cups unsifted all-purpose flour
- 3/4 cup cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup finely chopped nuts

Combine first 7 ingredients, stirring well
- Ginger mayonnaise:
- 1/2 cup olive oil
- 3 tablespoon wine vinegar
- 3 tablespoons grated onion

- 1/2 teaspoon dried whole oregano

- 1-1/2 beef flank steak
- 1 onion sliced
- 1 each green and red peppers cut into strips
- 2 cloves garlic minced
- 1 teaspoon chili powder
- 1 teaspoon cumin

- 1/4 teaspoon salt
- 8 ounce can chopped tomatoes
- 12 8" flour tortillas

- 1 lb. dried black-eyed peas
- 3 teaspoons fresh ground garlic
- 1 teaspoon salt or to taste
