HOMEMADE SESAME HAMBUGER BUNS

Place water, sugar and yeast in large bowl of mixer with paddle attachment
- 1/2 cup warm water 110 to 115 degrees
- 1/2 teaspoon sugar
- 1 (1/4 oz.) fast-acting dry yeast
- 1/2 cup warm milk (110-115 degrees)
- 2 tablespoons butter melted and cooled
- 2-1/2 to 2-3/4 cups bread flour divided
- 1 teaspoon salt
- 1 egg white lightly beaten
- 2 tablespoons sesame seeds
GREEN BEAN CASSEROLE

To make white sauce, melt butter in small saucepan over low heat
- 1-1/2 tablespoons butter
- 3 tablespoons all-purpose flour
- 1-1/2 cups milk
- 3-4 teaspoons dry ranch-style salad dressing mix
- 1/4 to 1/2 teaspoon white pepper
- 1 cup chopped onion
- 2 cloves garlic minced
- 1-1/2 cups sliced fresh mushrooms
- 1-1/4 lbs. fresh green beans cooked until crisp tender
- 1 cup fresh bread crumbs toasted
BAKED ZITI WITH SPICY PORK AND SAUSAGE RAGU

Heat olive oil in heavy pot over medium-high heat
- 2 tablespoons olive oil
- 4 ounces thinly sliced pancetta chopped
- 2 lbs. pork shoulder cut into 1-1/4” cubes
- 1 lb. Italian hot sausage casings removed
- 2 cups onions
- 3/4 cup chopped carrots
- 3/4 cup chopped celery
- 6 large fresh thyme sprigs
- 5 large garlic cloves chopped
- 2 bay leaves
- 1/2 teaspoon dried crushed red pepper
- 2 cups dry red wine
- 1-28-oz. can plum tomatoes in juice chopped, juice reserved
- 1-1/4 lb. ziti pasta
- 2 cups packed whole milk mozzarella cheese (about 8 ounces)
- 1/2 cup freshly grated Parmesan cheese
GINA'S SHRIMP CORN DOGS

Directions Add all the shrimp ingredients to a food processor and pulse until well combined and smooth
- Shrimp:
- 1 pound raw shrimp, peeled and deveined
- 1 clove garlic, minced
- 1 shallot, finely chopped
- 1/2 lemon, zested and juiced
- 1/4 cup bread crumbs
- Kosher salt and freshly ground black pepper
- Buttermilk Corn Batter:
- 2 cups all-purpose flour
- 1 egg
- 2 cups yellow cornmeal
- 1 teaspoon garlic powder
- 3 tablespoons sugar
- 1 1/2 tablespoons baking powder
- 2 1/2 cups buttermilk
- Special equipment: Thick wooden pop sticks
- Dipping Sauce, recipe follows
- For the shrimp:
SESAME MUSTARD SAUCE

Blend all ingredients. Makes 1/2 cup
- 1/4 cup Dijon style mustard
- 2 tablespoons sesame oil
- 2 tablespoons water
- 1/4 teaspoon hot pepper sauce
- 2 tablespoons minced cilantro (optional)

- 1/2 cup butter flavored Crisco melted
- 2 eggs
- 2 cups firmly packed light brown sugar
- 1 teaspoon vanilla
- 1-1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup finely chopped nuts
CINNAMON ROLLS

Combine potatoes, 2 cups water and 1 tablespoon coarse salt in large saucepan
- Dough:
- 1 lb. potatoes, peeled, cut into 2" pieces
- 1 tablespoon coarse kosher salt
- 1/2 cup (1 stick) butter
- 3 large eggs
- 4-1/2 cups unbleached all purpose flour
- 1/2 cup warm water (105 to 115 degrees)
- 2 tablespoons yeast
- 2 tablespoons sugar
- Filling:
- 1-1/2 cups packed golden brown sugar
- 2-1/2 tablespoons ground cinnamon
- 3 tablespoons unbleached all purpose flour
- 9 tablespoons (1 stick plus 1 tablespoon) unsalted butter at room temperature
- Glaze:
- 2 cups powdered sugar
- 1/4 cup (1/2 stick) unsalted butter, melted
- 2 tablespoons ( or more) whole milk
- 1 teaspoon vanilla
- 1/8 teaspoon coarse kosher salt
SPINACH STUFFED MUSHROOMS

Bake frozen souffle, uncovered at 350 degrees for 15 minutes or until slightly warm
- 1 (12 oz.) package frozen spinach souffle
- 1 cup soft breadcrumbs, toasted
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon dried minced onion
- 2 teaspoons lemon juice
- 1/4 teaspoon salt
- 25 large fresh mushrooms
- 1 tablespoon butter or margarine, melted
- Grated Parmesan cheese
ORANGE RAVANI

- 3 large oranges
- 1 cup margarine or butter (2 sticks) softened
- 1 cup regular farina
- 1 cup ll-purpose flour
- 2 tablespoons baking powder
- 1/4 teaspoon salt
- 6 large eggs
- 1 cup pecans or walnuts, finely chopped
- 1/4 cup honey
- 1 tablespoon lemon juice
CHOCOLATE ALMOND TORTE

- 6-1/2 ounces unsweetened chocolate
- 7 egg yolks
- 1 cup sugar
