Spiced Pumpkin Cheesecake with Caramel-Bourbon Sauce

For crust: Preheat oven to 350°F
- CRUST:
- 1 1/2 cups pecans, toasted, cooled
- 3 tablespoons golden brown sugar
- 3 tablespoons unsalted butter, melted
- 1/4 teaspoon ground cinnamon
- FILLING:
- 3 8-ounce packages cream cheese
- 1 1/4 cups sugar
- 1 teaspoon finely grated lemon peel
- 4 large eggs
- 1 15-ounce can pure pumpkin
- 1/2 cup plain whole-milk yogurt
- 2 tablespoons all purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 3/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- Large pinch of salt
- SAUCE:
- 1 cup (packed) dark brown sugar
- 1/2 cup whipping cream
- 6 tablespoons (3/4 stick) unsalted butter
- 1/4 cup light corn syrup
- 1/2 teaspoon salt
- 3 to 4 tablespoons bourbon
- 1 1/2 cups pecans, toasted, cooled
Shrimp with Tomatoes, Feta and Ouzo

- 1/2 cup extra-virgin olive oil
- 2 tablespoons minced garlic
- 2 (28-ounce) cans Italian plum tomatoes, crushed with your hands, with juices
- 1/2 cup bottled clam juice or seasoned shrimp stock
- 2 1/2 teaspoons minced fresh oregano leaves
- 1 1/2 teaspoons minced fresh thyme leaves
- 1 1/4 teaspoons crushed red pepper flakes
- 1/4 cup drained small capers
- Salt and pepper
- 5 tablespoons unsalted butter
- 2 pounds raw large shrimp, peeled and deveined
- 1/2 cup ouzo
- 1/2 pound Greek or Bulgarian Feta cheese, crumbled

- 1 package active yeast
- 2 cups all-purpose flour, plus more for kneading

Homemade Chewy Granola Bars - Peanut Butter

In a medium sized saucepan, melt together peanut butter, honey and coconut oil
- 1/2 cup peanut butter or sunbutter
- 1/3 cup honey
- 1/4 cup coconut oil (or another oil of your choice)
- 1 cup oats
- 1 cup total of any combination of: sesame seeds, coconut flakes, sunflower seeds, dried fruit, mini chocolate chips
Stuffed Butternut Squash

Slice squash in half and remove seeds
- 3 large butternut squash
- 1 1/2 cups long grain rice
- 3 cups chicken or vegetable broth
- 1 cup wild rice
- 1 shallot, diced
- 1/2 cup pinenuts, toasted
- 1/2 cup mushrooms, finely chopped
- 3 tbsp fresh rosemary, chopped
- 1 tbsp fresh parsley, chopped
- 1 small red pepper, finely diced
- salt and pepper, to taste
- butter or olive oil
