Mix it all together just until it is completely mixed
- 1 cup cornmeal
- 1 cup flour
- 4 tsp. baking powder
- 1/4 cup sugar (I added a little more because I like sweet cornbread)
- 1 tsp. salt
- 1 Tbs ENER-G Ener-G Egg Replacers
- 1 cup fatfree soy milk
- almost 1/2 cup applesauce, unsweetened
Cool Quinoa Salad with Beets

Rinse quinoa. Place in a medium saucepan with 2 1/2 cups water
- 1 1/4 cups quinoa
- 1 1/8 tsp salt
- 4 medium beets, trimmed
- 2 tbsp balsamic vinegar
- 1 tbsp lemon juice
- freshly ground pepper, for dressing
- 3 tbsp olive oil
- 1/2 large, seedless cucumber, chopped
- 1 pint yellow cherry tomatoes, halved
- 1 cup green beans, blanched and cut into 1" pieces
- 1/2 cup chopped flat leaf parsley
Wendy's Lentil and Brown Rice Casserole

Preheat oven to 350F (175C)
- 3/4 cup dried red lentils
- 3/4 cup brown rice
- 1 medium onion, chopped
- 3 cups vegetable stock
- 1 14oz can crushed tomatoes
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 3/4 vegan cheese (optional), grated
Black Bean Chili with Butternut Squash and Swiss Chard

Heat oil in heavy large pot over medium-high heat
- 2 tablespoons olive oil
- 2 1/2 cups chopped onions
- 3 garlic cloves, chopped
- 2 1/2 cups 1/2-inch pieces peeled butternut squash
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 3 15-ounce cans black beans, rinsed, drained
- 2 1/2 cups vegetable broth
- 1 14 1/2-ounce can diced tomatoes in juice
- 3 cups (packed) coarsely chopped Swiss chard leaves (from 1 small bunch)

- 4 cloves garlic, minced
- 2 tbsp finely chopped fresh oregano (or 1 tsp dried)

- 1 1/2 cups flour
- 1 1/2 cups stone ground cornmeal

- 2 cups "milk"
- 2 tbsp apple cider vinegar
