Vegan Sugar Cookies

- Ingredients:
- 3/4 cup vegan margarine, room temperature
- 2 & 1/2 cups flour
- 1 cup sugar
- 2 egg replacements
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon salt
- For the frosting:
- 3 tablespoons vegan margarine, room temperature
- pinch salt
- 1 & 1/2 cups powdered sugar, sifted
- lemon juice, or soy milk or water
Corn Chips & Guacamole

Corn Chips: Place all ingredients in a food processor and blend until smooth
- Raw Corn Chips:
- 3 C Corn
- 1/4 Onion
- 1/2 T paprika
- 1/2 t. cayenne
- a pinch or two of Celtic Sea Salt
- Guacamole
- 2 avocados, mashed
- 1 medium purple onion, diced
- 1 tomato, diced
- Juice from 1 lime
- 1/2 small, finely diced hot pepper
Ricotta Orange Pound Cake with Strawberries

Preheat the oven to 350 degrees F
- 1 1/2 cups cake flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon kosher salt
- 3/4 cup (1 1/2 sticks) butter, room temperature, plus more to grease the baking pan
- 1 1/2 cups whole milk ricotta cheese
- 1 1/2 cups sugar, plus 1 tablespoon
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 orange, zested
- 2 tablespoons Amaretto
- Powdered sugar, for dusting
- 1 pint strawberries, hulled and quartered or 3 oranges, cut into supremes
Chocolate and Green Tea Pudding

Pour the chocolate milk and tea leaves into a small pot and bring to a boil
- 1 cup chocolate soy milk
- 1 tablespoon loose green tea leaves
- 10 ounces (one bag) semisweet vegan chocolate chips
- 12 ounces silken tofu
- 1/4 cup soft tofu
- 2 tablespoons matcha tea (green tea powder, available at any good tea shop), optional
Baked Vegetable Stuffing

Combine the first 8 ingredients (through to salt & pepper) in a casserole dish
- 2 carrots, peeled and chopped into small pieces
- 1 celery stalk, finely chopped
- 1 med onion, finely chopped
- 1 zucchini, chopped into small cubes
- 1 cup of mushrooms, chopped into small pieces
- 5 slices of bread with crusts removed, cut into cubes
- 3 Tbl lemon juice
- salt and pepper to taste

- 1/4 cup vegetable stock
- 1/4 cup wine (can use 1/2 cup veg stock if you don't want to use the wine)
- 1/2 tsp sage
- 1/2 tsp thyme
- 2 Tbl fresh parsley, chopped (or 1 Tbl dried)
Lazy Vanilla Vegan Ice Cream

Mix ¼ cup of soy milk with the 2 tablespoons of arrowroot and set aside
- 2 c. soy creamer (or any non-dairy milk)
- 2 c. soy milk (or any non-dairy milk)
- ¾ c. sugar
- 2 T. arrowroot
- 2 t. vanilla extract (choose a high-quality brand; none of that imitation stuff either!)
Vegan Pumpkin Pie

Heat oven to 375 degrees F
- teaspoons blended "pumpkin pie spice" OR:
- 1 350-g box of silken firm tofu, drained
- 1 heaping cup of cooked or canned pumpkin
- 1 to 1 1/4 cups brown or golden sugar, not packed tight (read this first)
- dash salt
- 1 teaspoons cinnamon
- 1/2 teaspoon ground dry ginger
- 1/2 teaspoon ground cloves
- 1/2 teaspoon allspice
- 1 teaspoons nutmeg
- 1 pie crust
Pecorino Black Pepper Breadsticks

Preheat oven to 450F. Lightly spoon flours into dry measuring cups; level with a knife
- 1/3 cup all-purpose flour
- 1/4 cup wholewheat flour
- 1/4 cup grated fresh pecorino Romano cheese
- 3/4 tsp baking powder
- 1/2 tsp freshly ground black pepper
- 5 tbsp water
- 1 tsp extra virgin olive oil
- cooking spray
Mediterranean Finger Sandwiches

- 1/2 cucumber, peeled and thinly sliced

- 6-8 tablespoons of your favorite garlic hummus
- 10 medium slices firm textured wheat bread
- White, black or red ground pepper
- 2 tablespoons cilantro or parsley, finely chopped

- 1 teaspoon dried oregano
