Pecan Cheese Rounds

Crisp and cheesy with a nutty crunch, these crackers put their store-bought counterparts to shame
- MAKES 40
- 1 cup shredded sharp Cheddar cheese
- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour
- 1/2 cup finely ground pecans
- 3/4 teaspoon kosher salt
- 40 pecan halves or 1/3 cup roughly
- chopped pecans
Carrot Cake, Sheet and Cream Cheese Frosting

Preheat oven to 350 degrees F
- 2 cups sugar
- 3 large eggs
- 3/4 cup vegetable oil -no other oil
- 1 teaspoon vanilla extract
- 3/4 cup (6-ounces) sour cream
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 1/2 teaspoons salt
- 1 can (20-ounces) pineapple, juice and all* crushed
- 2 cups pecans or walnuts, toasted, chopped optional
- 2 1/2 cups flour, all-purpose
- 2 cups carrots, grated, packed down
- Cream Cheese Frosting
- 1/2 cup (1 stick; 4-ounces) butter softened
- 1 package (8-ounces) cream cheese softened
- 1 teaspoon vanilla extract
- 4 cups (1 Pound box +1/4 cup) confectioner's sugar
