- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 2/3 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1/2 teaspoon kosher salt
- 1 (12-ounce) jar caramel ice cream topping*
- 2 cups pecan pieces

- ICING:
- LIGHTLY GREASE COOKIE SHEETS /PREHEAT OVEN TO 200 deg. F.
- 3 cups / ground walnuts
- 1/2 cup / bread crumbs
- 3/4 cup / sugar
- 1/2 tsp. / cinnamon
- 1/2 tsp. / lemon juice
- 1 egg
- 2 egg yolks
- Mix all ingredients well and roll to a 1/2" inch even thickness by hand.

- 2/3 cup / sugar
- 1 tsp. / vanilla extract
- 1Tbsp. / lemon juice
- Beat until firm stiff peaks form.
Salmon Cakes, Baked (Muffin Cups)

- SAUCE:
- 1 can (14-3/4 ounces) salmon, drained, bones and skin removed
- 1-1/2 cups soft whole wheat bread crumbs
- 1/2 cup finely chopped sweet red pepper
- 1/2 cup egg substitute
- 3 green onions, thinly sliced
- 1/4 cup finely chopped celery
- 1/4 cup minced fresh cilantro
- 3 tablespoons fat-free mayonnaise
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1/8 to 1/4 teaspoon hot pepper sauce
- 2 tablespoons fat-free mayonnaise
- 1/4 teaspoon capers, drained
- 1/4 teaspoon dill weed
- Dash lemon juice
- 1 . In a large bowl, combine the first 11 ingredients. Place 1/3 cup salmon mixture into eight muffin cups coated with cooking spray. Bake at 425° for 10-15 minutes or until a thermometer reads 160°.
- 2 . Meanwhile, combine the sauce ingredients. Serve with salmon. Yield: 4 servings.

- 11 Tablespoons butter, cut up
- 4 ounces unsweetened chocolate, coarsely cut up
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups sugar
- 3 large eggs
- 1/2 cup (4-ounces) coffee-flavored liqueur (coffee will do)
- 3/4 cup pecans, toasted, coarsely chopped optional
- Chocolate Ganache
- 1 1/4 cups (7 1/2-ounces) semi-sweet chocolate chips
- 1 tablespoon light corn syrup
- 1 cup heavy cream
- 1 cup pecans, toasted, coarsely chopped (3 whole nuts for garnish)
