Pork Schnitzel

MAKES 6 servings PREP 10 minutes, COOK 8 minutes--careful, easy to get too browned-burnt
- 6 Thin boneless center-cut pork chops (about 1 1/4 pound)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup all-purpose flour
- 1 large egg (beaten with 1/4 cup water)
- 2/3 cup plain dry bread crumbs (Panko is better)
- 1/2 package medium egg noodles
- 4 tablespoons unsalted butter
- Chopped fresh parsley for garnish optional
Chicken Bow Tie Salad

Mix all ingredients, dress with one 16 oz
- 1 pkg. bow tie pasta, cooked , drained
- 6 oz. dried cranberry
- 1 cup green or red grapes
- 1 1/2 cup chopped celery
- 6 small green onions
- 1 large can pineapple chunks, drained
- 1 large can mandarin oranges, drained
- 1 whole chicken (rotisserie) cut in cubes
- juice of 2 lemons
- salt & pepper to taste
- 16 oz. (Marzettis) coleslaw dressing
- mayonnaise-small amount
- 1 cup cashews-add last, just before serving
Beef And Cheese Manicotti

Heat a heavy medium skillet over medium heat
- 4 teaspoons olive oil
- 1 medium onion coarsely chopped
- 1 pound ground beef
- Salt to taste
- Freshly-ground black pepper to taste
- 14 manicotti - (an 8-oz pkg)
- 1 container whole-milk ricotta - (15 oz)
- 3 cups shredded mozzarella
- 1 cup grated Parmesan
- 2 tablespoons chopped fresh Italian parsley leaves
- 2 garlic cloves minced
- 3 cups marinara sauce
- 2 tablespoons butter cut into pieces
Buttercream, The Perfect Crusting Buttercream

Instructions Cream shortening and vanilla in mixer for 2-4 minutes
- 1 bag powder sugar (two pounds or about eight cups)
- 1 cup shortening (I used original Crisco)
- 2 teaspoons vanilla extract (use clear if want white frosting)
- 1/2 cup to 3/4 cup milk
- pinch salt

- 8 oz semisweet chocolate, coarsely chopped

- 1/2 cup sour cream
- 2 teaspoons lemon zest
- 1 cup sweetened flaked coconut, divided

- Yield 1 cup
- 2 cups powdered sugar
- 2 Tablespoon milk
- 2 teaspoons fresh lemon juice
- Add 1 Tablespoon milk at a time if needed for desired consistency
