Chicken or Turkey Gyro

Hellmanns
- 1/4 cup coarsely grated seedless cucumber, squeezed well
- 3/4 cup Hellmann's Mayonnaise
- 2 cloves garlic, finely chopped
- 1 tsp fresh grated lemon zest
- 1 Tbsp fresh lemon juice
- Salt and ground pepper to taste
- Fresh spinach leaves, rinsed and patted dry
- 8 cherry or grape tomatoes, halved
- 1 lb rotisserie chicken or turkey, or grilled chicken or turkey breast, sliced
- 4 whole wheat pita breads,split
- (My twist--add sliced avacados and sprouts)
Squash Casserole

- Use enough squash to fill up a 8x8 aluminum baking pan.
- Zucchini squash, sliced 1/4-inch thick
- Yello squash, sliced 1/4-inch thick
- 1/2 onion, thinly sliced
- 1 can of cream of mushroom soup or cream of chicken soup
- 3/4 cup sour cream
- 1 egg
- plain bread crumbs
- cheddar cheese, shredded
- Salt and pepper
- Top with red pepper flakes or dill
Ratatouille

1. Preheat oven to 400 F. 2
- Bell peppers, seeds removed, chopped into 1/2 inch square pieces:
- 1 lb of yellow onions, chopped
- 3 cloves garlic, crushed
- 1 lb zucchini, chopped
- 1 lb yellow squash, chopped
- 1 --1 lb green bell peppers
- 1/2 --1/2 lb red bell peppers
- 1/2 --1/2 lb yellow bell peppers
- 1 lb eggplant, 1/2 inch cubes
- 1 lb fresh ripe tomatoes (or equal amount of high quality canned tomatoes, chopped)
- 1/4 cup olive oil
- Salt to taste
- 2 sprigs thyme
- 1 bay leaf
- 1 -inch sprig rosemary
- 3/4 cup vegetable stock (or thin tomato juice)
- Fresh ground pepper to taste
Warm Sweet and Savory Pasta Salad

1. Bring a large pot of salted water to a boil
- 8 ounces rotini pasta(such as Barilla Plus)
- 1 small red onion,thinly sliced
- 3 Tbsp finely chopped fresh oregano
- 1/2 cup low-sodium chicken broth
- 3 Tbsp white balsamic vinegar
- 2 cups cooked, shredded chicken breast
- 1 can (15.5 ounces)black beans, drained and rinsed
- 1/4 cup chopped green olives

- 1/4 cup butter or margarine
- 2 medium yellow summer squash, sliced

- 2 tbsp canned chopped green chilies

- 7 oz won-ton wrappers (about 1/3 of a medium package)
- Canola oil
- 2/3 cup Asiago cream sauce ( check recipe for Asiago cream sauce)
- 1/3 cup(8oz) ground Italian sausage, fully cooked
- 2 cups (8 oz) grated mozzarella cheese, divided
- 1/2 cup fresh tomatoes, diced

Spaghetti and Meat Sauce

Cook of the Week--Chandler Statesman
- For the sauce:
- 1 medium onion, diced and browned in butter or olive oil
- 1 pound extra lean ground beef, browned
- 1 small cantomato paste
- 1 can of water (the same can from the tomato paste)
- 1 small can tomato sauce
- 1 tsp Worchestershire sauce (poured over the meat while browning)
- 1 tsp garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp powdered oregano
- 3 tbsp parsley, dried
- A dash of rosemary leaves
- Pinch of dill seed
- 1/4 tsp thyme, dried
- 1 can mushrooms, sliced
- 1 round of maple syrup ( a round is when you pour the syrup in a circular fashion over the dish one time around the container)
- 1 tsp flour/cornstarch, for thickening
- Spaghetti noodles, thin and cooked
- Parsley flakes
- Parmesan cheese
