- 1/2 c sour cream
- 1 4.25 can diced green chiles
- 1/2 c sliced green onions
- 1 T minced green or red jalepenos
- salt & pepper
- 10 6-8" flour tortillas

- 2 32 oz Chicken Broth
- 1 Onion
- 1 small pkg baby carrots
- 4 to 5 Celery Stalks
- 1 box Wylers Mrs. Grass soup Mix
- 1 pkg Bear Creek Chicken soup Mix.
Mother's Meatloaf

- 2 Lbs. Cod Fish
- 1 Cup Hot Pepper Rings
- 12 Lemons (Juice from them)
- 8 Gloves of Garlic cut in half with toothpick
- 1/4 Cup Mazola or Canola Oil
- 1/4 Tsp. Hot Pepper Flakes
Three-Cheese Lasagna with Italian Sausage

FOR SAUCE: Heat oil in heavy large sauce pan over medium heat
- SAUCE
- 1 tablespoon Olive Oil
- 1 cup chopped Onion
- 3/4 cup finely Chopped peeled Carrots
- 2 tablespoons minced Garlic
- 8 ounces lean Ground Beef
- 8 ounces Sweet or hot sausages, casings removed
- 1 28-ounce can Crushed Tomatoes with added puree
- 1/4 cup Tomato Paste
- 1/4 cup Fresh Basil
- 1 tablespoon golden Brown Sugar
- 1 Bay Leaf
- 1/2 teaspoon dried crushed Red Pepper
- LASAGNA
- 12 Lasagna Noodles - Oven Ready
- 2 15-ounce containers part-skim Ricotta Cheese
- 1 cup grated Parmesan Cheese (about 3 ounces)
- 1 10-ounce package frozen chopped spinach, thawed, drained, squeezed dry
- 2 large Eggs
- 4 3/4 cups grated Mozzarella Cheese (about 1 1/4 pounds)

Angel Hair with Broccoli and Anchovies
- 1 - 8 oz package DeBoles Angel Hair Pasta
- 1/2 cup Extra Virgin Olive Oil
- 4 garlic cloves, thinly sliced
- 1 tsp of Hot Pepper flakes
- 2 - 2 oz cans Anchovies (optional)
- 2 bunches broccoli rabe(cut inro 2 inches, or 4 cups broccoli florets
- 1/3 cup of freshly grated Parmesan cheese
- Sea Salt
- Coarse ground Black Pepper
Barbecued Beef or Pork

1. Place roast in Crock pot
- 3 lb boneless chuck roast or pork roast
- 1 1/2 c Ketchup
- 1/4 c Brown Sugar (packed)
- 1/4 c Red Wine Vinegar
- 2 Tbsp Dijon-style Mustard
- 2 Tbsp Worcestershire Sauce
- 1 tsp Liquid Smoke Flavoring
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/4 tsp Garlic Powder
Pan-Seared Veal Chops

- 4 rib veal/lion chops 0r scallapini ( each 10 to 12 ounces)
- 1/4 cup ( 1/2 stick) butter
- 6 tablespoons chopped shallots
- 2 tsp chopped fresh thyme or 1/4 tsp dry thyme
- 1 cup low-salt chicken broth
- 1 tbl balsamic vinegar
