Ingredients

  • 3

    Lbs. Smelts (already fillet)

  • Flour

  • Eggs (Beated)

  • Seasoned Bread Crumbs

Directions

1) Fillet Smelts if needed. 2) Using 3 seperate containers. Have one with flour, egg, and bread crumbs. 3) Bread smelts in flour egg and bread crumbs. 4) Place on waxpaper covered cookie sheet. 5) Repeat this process, for all smelts, adding wax paper on top of each layer to create multiple layers of smelts. 6) When finished cover last layer with waxpaper and put in freezer. 7) After a few days, put into freezer bags until christmas eve. 8) On the day of serving, deep fry them and serve warm. Sprinkle salt on them before serving.
