- Ingredients
- a few drops of olive oil
- 6 – 8 cloves garlic, coarsely chopped
- 1/2 medium red onion, diced
- salt and freshly ground black pepper
- zest of one orange
- 1/2 teaspoon oregano
- 1/4 – 1/2 teaspoon red chile pepper flakes
- 1 pound spaghetti (gluten-free folks try Tinkyada rice pasta)
- 1 1/2 cups cooked chickpeas (or one 15-ounce can, rinsed and drained)
- 1 cup loosely packed chopped fresh basil or 1/2 cup frozen chopped basil, thawed
- 16 kalamata or oil-cured black olives, pitted and coarsely chopped
- 2 cups cherry tomatoes, halved (larger ones quartered)
Cauliflower Parmesan

Heat the oven to 400 degrees
- 1/2 cup all-purpose flour
- 4 large eggs, lightly beaten
- 3 cups panko or plain unseasoned bread crumbs
- Kosher salt, as needed
- Black pepper, as needed
- 1 medium head cauliflower, trimmed and cut into 2-inch florets
- Olive oil, for frying
- 5 cups Simple Tomato Sauce (see recipe)
- 1 cup finely grated Parmesan, preferably Parmigiano-Reggiano
- 1/2 pound fresh mozzarella, torn into bite-size pieces

- Beans
- 2 quarts water
- 1 tablespoon table salt (Alanna says it's essential)
- 1 1/2 pounds fresh green beans, trimmed and cut into bite-size pieces
- Sauce
- 10 ounces mushrooms (I used a combination of regular button mushrooms and shiitake)
- 3 cloves garlic, minced
- generous pinch cayenne pepper (had to add it for the New Orleanians)
- Salt to taste
- Freshly ground pepper to taste
- 2 tablespoons flour
- 3/4 cup vegetable broth (I used Imagine's No-Chicken)
- 1 tablespoon dry sherry (Alanna's brilliant addition)
- 3/4 cup soy creamer (or try full-fat unsweetened soymilk)
- Topping
- 1 1/2 slices whole grain bread
- 1 tablespoon Earth Balance margarine (the best tasting margarine in the world and no trans-fat)
- 1/8 teaspoon salt
- 1/16 teaspoon freshly ground black pepper
- 1 3-ounce can of French fried onions
