Curried Cauliflower with Tomatoes

. In a bowl, combine paprika, coriander, and turmeric; set aside
- INGREDIENTS
- 2 tsp. hot paprika
- 2 tsp. ground coriander
- 1 tsp. ground turmeric
- 2 tbsp. peanut oil
- 2 tsp. black mustard seeds
- 1/8 tsp. asafetida
- 2 serrano chiles, chopped
- 1 medium head cauliflower, cored and roughly chopped
- 3 plum tomatoes, cored and roughly chopped
- Kosher salt, to taste

- For the Cake:
- 4 sheets whole-wheat matzo (5 ounces), broken into pieces
- 2/3 cup walnut pieces
- 1 tart green apple, peeled and diced
- 2 teaspoons freshly grated lemon zest
- 1 teaspoon ground cinnamon
- 1 teaspoon minced peeled fresh ginger
- 1/2 teaspoon salt
- 2 tablespoons white sweet dessert wine, such as Muscat or ice wine
- 5 large eggs, at room temperature (see Cake-Baking Tips)
- 3/4 cup packed light brown sugar

- 6 egg yolks (including the 2 reserved in Step 3)

Homemade Cajun Seasoning Combine all in a jar or container with a tight fitting lid
- Per steak:
- Homemade Cajun Seasoning
- 1/2 C paprika
- 1 tbsp + 1 tsp sea salt
- 1 tbsp + 1 tsp garlic powder
- 1 tbsp + 1 tsp onion powder
- up to 1 tbsp cayenne (or more to taste)
- 1 tbsp white pepper
- 1 tbsp black pepper
- 1 tbsp dried basil
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- 2 tsp dry mustard
- 1 tsp sugar(optional)
- Cajun Roasted Cauliflower “Steaks”
- 1 large head of cauliflower cut into 3 1/2″ “steaks”, the remaining cauliflower kept for another use

Lentil, Cashew, & Quinoa Stuffed Peppers

Preheat the oven to 200C/400F
- 3 medium bell peppers (red, orange and yellow are the sweetest)
- 1 cup cooked quinoa
- 1 cup cooked Puy or green lentils
- 1 1/2 tbsp olive oil (divided)
- 1 onion, diced
- 1/2 cup whole cashews
- 2 large cloves of garlic, minced
- 1 tsp dried basil
- 1 tbsp minced fresh thyme
- 3-4 sun-dried tomatoes, rehydrated and chopped (optional)
- generous handful of chopped kale
- 2 tbsp water
- salt & pepper, to taste

- 1 (6-ounce) box wild rice (I prefer Uncle Ben's Original Recipe)
- 3 cups cooked and shredded chicken (a rotisserie bird works perfectly)
- 1 cup green grapes, cut into quarters or eighths depending on size
- 1/2 cup sliced almonds, toasted
- 1/2 cup light mayonnaise (or more or less to taste)
