Poblanos Stuffed with Cheddar and Chicken

Position an oven rack about 4 inches from the broiler and heat the broiler on high
- 4 large poblano chiles
- 2 medium tomatoes, chopped
- 1/2 medium white onion, chopped
- 1 large clove garlic, chopped
- 1 tsp. dried oregano, crumbled
- 1 tsp. ground cumin
- Generous pinch ground cinnamon
- Kosher salt
- 1 Tbs. olive oil
- 2 cups shredded cooked chicken, preferably dark meat
- 1-1/2 cups cooked brown or white rice
- 2 cups grated sharp or extra-sharp white Cheddar (about 7 oz.)
- 1/4 cup chopped fresh cilantro (including some tender stems)
- 1 Tbs. lime juice
Potato, Caramelized Onion and Goat Cheese Gratin

Preheat the oven to 425 degrees F
- 2 Tbsp. extra virgin olive oil
- 1 large onion, cut in half, then thinly sliced into half-rounds
- 1 tsp. dried thyme
- Salt and freshly ground black pepper
- 2 pounds Yukon Gold or White Rose potatoes, peeled and sliced 1/4 inch thick
- 2 Tbsp. finely chopped fresh parsley
- 1/2 pound soft goat cheese
- 3 Tbsp. unsalted butter, cut into 8 slices
- 1 cup whole milk

- 3 cups cooked chickpeas (canned or made fresh) – also called garbanzo beans
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tbsp. cumin
- 2 tsp. chili powder
- 1/2 tsp. salt
- 1 tbsp. olive oil
Mocha Pecan Muffins

Preheat the oven to 375 degrees
- 2 cups all-purpose flour
- 3/4 cup whole wheat flour
- 1 cup firmly packed dark or light brown sugar
- 1/3 cup Dutch-processed cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 cup vegetable oil
- 1/4 cup salted butter, melted
- 3 large eggs
- 1 cup plain yogurt, low fat or full fat
- 1/2 tsp. espresso powder dissolved in 1/2 cup water (or substitute a half cup of morning coffee)
- 1 tsp. vanilla
- 1 cup pecans, chopped
- 1 cup mini chocolate chips
Guacamole Three Ways

Cut the avocados in half, running your knife around the pit from stem to blossom end and back up again
- To make it herby, add:
- 2 medium ripe avocados
- 1 garlic clove peeled and finely chopped or crushed through a garlic press
- Salt
- 2 Tbsp. chopped cilantro
