Honey Mustard Dressing

- 2 lb / 1 kg boneless skinless chicken thigh fillets
- Marinade
- 3 large garlic cloves , minced (~ 3 tsp)
- 3 tsp white wine vinegar (or red wine or apple cider vinegar)
- 3 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 3 tbsp Greek yoghurt
- 1 1/2 tbsp dried oregano
- 1 tsp salt
- Black pepper
- Tzatziki
- 2 cucumbers (to make about 1/2 - 3/4 cup grated cucumber after squeezing out juice)
- 1 1/4 cups plain Greek yoghurt
- 2 tsp white wine vinegar (or red wine or apple cider vinegar)
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil (or more if you want richer)
- 1/2 garlic clove , minced
- 1/2 tsp salt
- Black pepper
- Salad
- 3 tomatoes , desseeded and diced
- 3 cucumbers , diced
- 1/2 red spanish onion , peeled and finely chopped
- 1/4 cup fresh parsley leaves
- Salt and pepper
- To Serve
- 4 to 6 pita breads or flat breads

1. In a bowl, mix all ingredients except for the pita, tomatoes, and lettuce
- 12 ounces shredded chicken
- 2/3 cup fat-free or low-fat plain Greek yogurt
- 1/2 cup celery, finely chopped
- 1 1/2 tablespoons sweet relish
- 1 tablespoon Dijon mustard
- 1 scallion, thinly sliced
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt, to taste
- Pepper, to taste
- 4 leaves lettuce
- 20 cherry tomatoes
- 4 pita breads
Dark & Stormy Rum Cake

This glorious Dark and Stormy Rum Cake is the cure-all for a chilly evening
- For the Cake:
- 2 cups all-purpose flour
- 1/4 cup cornstarch
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 3 teaspoons baking power
- 1 tsp salt
- 1 tsp ground ginger
- 5 eggs
- 1/2 cup vegetable oil (plus extra for greasing pan)
- 1/2 cup dark spiced rum
- 1/2 cup Bundaberg Ginger beer
- 1/2 cup whole milk
- 2 Tablespoons lime juice
- 1 Tablespoon fancy molasses
- For the Rum Glaze:
- 1/2 cup melted unsalted butter
- 1/2 cup packed brown sugar
- 1/4 cup Bundaberg Ginger beer
- 1/4 cup dark spiced rum
- pinch of salt
- pinch of ginger

- 4 cups leftover prepared stuffing
- 4 cups coarsely chopped leftover turkey
- 3/4 cup mayo
- 1/4 cup whole berry cranberry sauce
- 2 cups leftover mashed potatoes
- 1 1/2 cups shredded low-fat mozzarella cheese
Maple Bacon Baked Brie

Strawberry Hibiscus Caipirinha

Prepare hibiscus-infused cachaca
- Hibiscus-infused Cachaca:
- 1/2 1/2 1/2 fresh lime, core removed
- 2 2 2 tbsp white sugar
- 1/4 1/4 1/4 cup fresh strawberries, diced small
- 2 2 2 oz. hibiscus-infused cachaca
- ice
- 3 3 3 orange wheels for garnish
- 4 4 4 hibiscus tea bags
- 1 1 1 cup cachaca.
- to 20 to for 20 minutes. Remove tea bags and squeeze out excess liquid. Hibiscus infused cachaca is ready to use.
CHICKEN TOMATO PASTA BAKE

Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius)
- – 1 tablespoon olive oil
- – 1 pound boneless skinless chicken breast, cut into bite-size pieces
- – 2 cloves garlic, minced
- – One 14-1/2-ounce can diced tomatoes
- – 14 ounces spaghetti sauce
- – 2 ounces (1/4 of 8-ounce package) cream cheese
- – One 9-ounce package fresh spinach leaves, chopped
- – 1-1/2 cups multigrain penne pasta, cooked according to package directions (or your preferred type of penne pasta)
- – 1 cup shredded mozzarella cheese
- – 2 tablespoons grated Parmesan cheese
