- 4 (6 ounces or 170 grams each) boneless, skinless chicken breasts
- 1/2 teaspoon salt, divided
- 1/2 teaspoon pepper, divided
- 3 medium zucchini or yellow summer squash, roughly chopped (588 grams total)
- 1 medium (110 grams) onion, roughly chopped
- 1 cup hummus (246 grams), homemade or store-bought (certified gluten-free if necessary)

- 1 teaspoon paprika, divided
- 1 lemon, quartered

- 12 tablespoons unsalted butter, 1 1/2 sticks, melted
- 1 cup granulated sugar (200 g)
- ½ cup brown sugar (110 g)
- 3 large eggs
- ¾ teaspoon vanilla extract
- 1 ½ cups all purpose flour (190 g)
- ¼ cup unsweetened cocoa powder (30 g)
- 1 teaspoon salt
- ½ cup semi-sweet chocolate chips (90 g)
- 3 cups soft caramel candy (985 g)
- 1 ½ cups soft caramel candy (490 g)
- ¼ cup heavy cream (60 mL)

Skinny Peanut Butter Swirl Brownies

Deliciously fudgy tasting without all the guilt!
- 3/4 cup (185g) creamy peanut butter1
- 6 ounces low fat or fat free plain or vanilla Greek yogurt
- 1/4 cup (60ml) milk (I like to use unsweetened almond milk)
- 1 large egg (or 2 egg whites)
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 cup (200g) granulated sugar or coconut sugar (see note above in post about substitutions)
- 1/2 cup (42g) unsweetened natural or dutch process cocoa powder
- 1/2 cup (40g) old-fashioned rolled oats2

Mix together dry ingredients add milk and stir batter will be thick add onions and mix throughly heat 1/2 inch oil
- 3/4 cup flour
- 1 tablespoon sugar
- 1 tablespoon cornmealshopping list

- 2 teaspoons salt ( adjust the salt to your family's taste I only use 1 teaspoon)
- 3/4 cup milk
- 2 and 1/2 cups chopped onions about 2 small onions

Funeral Potatoes

Place potatoes into refrigerator to thaw out overnight
- 1 (28 oz.) package frozen cubed O’Brien potatoes, thawed
- 1 teaspoon garlic salt
- 1/2 teaspoon pepper
- 1 teaspoon dried onion flakes
- 1 tbsp. dried chives
- 2 cups shredded cheddar cheese
- 1 (10.5 oz.) can cream of chicken
- 2 cups (16 oz.) sour cream
- 2 cups crushed potato chips
- 3 tbsp. butter, melted
