- Combine in the bottom of large salad bowl:
- Wash 2 heads of romaine lettuce and spin dry
- Crisp and dice 6/7 slices of bacon
- 6 tbsp. vegetable oil
- 2 " vinegar
- 1 " olive oil
- 1 " lemon juice
- 1 tsp salt
BERRY FETA SPINACH SALAD WITH CREAMY STRAWBERRY POPPY SEED DRESSING

Caramelize pistachios according to directions
- Berry Spinach Salad:
- 10 10 10 cups baby spinach leaves
- 1/2 1/2 1/2 cup strawberries, sliced**
- 1/2 1/2 1/2 cup blueberries
- 1/2 1/2 1/2 cup raspberries
- 1/2 1/2 1/2 red onion, thinly sliced then quartered
- 1 1 1 sweet apple, chopped or thinly sliced
- 1 1 1 kiwi peeled, sliced and quartered (optional)
- Creamy Strawberry Poppy Seed Dressing:
- 1 5.3 1 5.3 1 5.3 oz. container strawberry yogurt
- 1/4 1/4 1/4 cup mayonnaise
- 2 2 2 tablespoons sour cream
- 2 2 2 tablespoons milk
- 3 3 3 tablespoons sugar
- 1 1 1 tablespoon apple cider vinegar
- 1 1 1 tablespoon poppy seeds
- 1 1 1 tablespoon sesame seeds
- 1/2 1/2 1/2 teaspoon dry minced onion flakes (optional)
- Garnishes
- 1/2 1/2 1/2 recipe Caramelized roasted and salted pistachios (click HERE) *
- 1/3 1/3 1/3 cup feta cheese crumbles
- 5 MINUTE PERFECT CARAMELIZED NUTS:
- 1 1 1 cup nuts*
- 1/4 1/4 1/4 cup sugar
- 1 1 1 tablespoon butter
- 1/4 1/4 1/4 teaspoon cinnamon (optional)
- to 2 5-7 to parchment paper and immediately separate using 2 forks OR let the nuts harden together and break them apart with your fingers once cooled. The nuts and coating will harden in 5-7 minutes.
- NOTES
- If using chopped nuts, don't chop them too small or they will burn.
