ANZAC Biscuits

ANZAC Biscuits are a sweet biscuit made with rolled oats as the main ingredient
- 1 cup rolled oats
- 1 cup plain flour (all purpose flour)
- 1 cup sugar
- 3/4 cup coconut (not the sweetened stuff but what we call desiccated or here it is coconut powder which I get at the International stores)
- 4 oz butter
- 2 tablespoons golden syrup (I can get this from the Commissary, Maple syrup would be a substitute but give a slightly different taste)
- 1/2 teaspoon bicarbonate of soda (baking soda)
- 1 tablespoon boiling water
Apple Oatmeal Crisp

Combine apples, sugar and lemon juice
- 4 cups peeled apples, chopped
- 3 tbsp sugar
- 1 tbsp lemon juice
- vegetable cooking spray
- 1 cup regular rolled oats
- 1/2 cup firmly packed brown sugar
- 1/3 cup flour
- 1/4 cup butter, melted
- 1 tsp. cinnamon
- 1/4 tsp salt
Chocolate Whoopie Pie Cake

A dense fudgy cake with a soft and pillowy marshmallow creme filling and creamy chocolate ganache
- Marshmallow Creme Filling:
- 1 (15.25 oz.) box chocolate fudge cake mix
- 1 (3.9 oz.) box instant chocolate fudge pudding mix
- 3/4 c. water
- 3/4 c. vegetable or canola oil
- 4 large eggs
- 1 c. sour cream (or Greek yogurt)
- 1 tsp. vanilla
- 10 Tbl. unsalted butter, room temperature
- 1 (7 oz.) carton marshmallow creme
- pinch of salt
- 1 1/2 tsp. vanilla
- 2 c. powdered sugar
- Chocolate Ganache:
- 1/2 c. chocolate chips (I used milk chocolate)
- 3 Tbl. whipping cream
Mango Tequila Sunrise

Add grenadine to mason jar
- 3.0 oz orange juice
- 1.5 oz. Cuervo Gold Tequila
- 1.0 oz. mango puree
- 0.5 oz. Sailor Jerry Spiced Rum
- 0.5 oz. grenadine
- 1 orange slice for garnish
- 1 cherry for garnish
Oven Barbecued Chicken

Preheat oven to 350 degrees
- 4 skinless boneless chicken breasts
- 3/4 cup reduced sugar ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon agave nectar
- 1 teaspoon chili powder
GRILLED CHICKEN, BACON, AND PEAR SALAD WITH POPPYSEED DRESSING

Whisk together all dressing ingredients until smooth
- 8 cups chopped romaine lettuce
- 6 strips of bacon, cooked til crispy (or to desired doneness) and chopped
- 1/2 cup walnuts
- 3 tablespoons granulated sugar
- 3 boneless skinless chicken breasts, pounded to even thickness
- 1 teaspoon garlic powder
- salt and pepper to taste
- 1/2 cup crumbled blue cheese or feta cheese
- 2 pears, sliced
- 1/2 red onion, sliced
- poppyseed dressing
- 3/4 cups reduced fat mayo
- 1/4 cup milk
- 1/4 cup sugar
- 1/4 cup apple cider vinegar
- 2 / tablespoons poppy seeds
- 1/2 teaspoon dry ground mustard.
- 1/8 teaspoon salt
Beer Cheese Beer Brats

Add beer and brats to sauce pan and cook on medium high heat for 10-15 minutes
- 2 12oz Beers of Choice
- 5 Bratwurst
- 1 Cup Cream Cheese
- 2 Cups Shredded Cheese of Choice
BBQ Chicken Tortilla Pizzas

- 4 flour tortillas
- 1/3 cups BBQ sauce
- 2 cups shredded chicken
- 1/4 red onion, thinly sliced
- 1 cup mozzarella cheese

CROCK POT CHICKEN TACO CHILI

- To make your own taco seasoning, omit the packet, cumin and chili powder above and use below instead:
- 1 small onion, chopped
- 1 (15.5 oz) can black beans, drained
- 1 (15.5 oz) can kidney beans, drained
- 1 (8 oz) can tomato sauce
- 10 oz package frozen corn kernels
- 2 (10 oz) cans diced tomatoes w/chilies
- 4 oz can chopped green chili peppers, chopped
- 1 packet reduced sodium taco seasoning or homemade (see below)
- 1 tbsp cumin
- 1 tbsp chili powder
- 24 oz (3) boneless skinless chicken breasts
- 1/4 cup chopped fresh cilantro
- 1 1/2 tablespoons cumin
- 1 1/2 tablespoons chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
