- 12 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract

Cinco de Mayo Mexican Chicken Rub & Fruit Salad

Prepare 2 chicken breasts as follows: On medium high, heat oil oil in pan
- Mexican Chicken Dry Rub
- 1 tsp oregano
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper to taste
- Olive Oil
- Fruit Salsa
- 1 Roma Tomato
- 1 Sunburst Tomato (sweet yellow tomato)
- 1 Avocado (omit if you’re on Cycle 1)
- Juice of 1/2 to 1 lemon to taste
- Zest of 1 lemon
- 2-3 Tbsp of oil to taste
- 1/2 tsp of Xylitol to taste
- Salt and Pepper to taste
PIGS IN A BLANKET BAKED BRIE

- 1 (8 ounce) wheel brie cheese
- 2 premade circular pie crusts
- 1 clove garlic, minced
- 1/2 teaspoon chopped fresh chives
- 1/2 teaspoon chopped fresh rosemary
- 36 cocktail sausages (1 average pack)
- 1 egg yolk, beaten
- Sesame seeds and poppy seeds, optional

- NOTE...i have made this batter with 1/4 c. sugar...Erna just said 3/4 c. sugar in batter. to be safe i would use 1/2 c. (3/4 c. sounds too sweet)

- 1/2 c. granulated sugar
- 1/3 c. flour
- 1/2 tsp cinnamon
- 1/4 c. butter, cold..diced small to "cut" into crumble.in a small bowl mix together sugar, flour and cinnamon. with a pastry blender cut the butter into sugar mixture untill mixture resembles coarse meal.

Salmon with Dill & Cucumber Sauce
