Chocolate Mint Sparklers

Preheat oven to 350°F (180°C)
- 1 cup (250 mL) butter, softened
- 3/4 cup (175 mL) sugar
- 3/4 cup (175 mL) packed brown sugar
- 2 eggs
- 1 tsp (5 mL) mint extract
- 1 3/4 cups (425 mL) Robin Hood® Original All Purpose Flour
- 1 1/4 cups (300 mL) cocoa powder
- 2 tsp (10 mL) baking soda
- 1/4 tsp (1 mL) salt
- 2 cups (500 mL) semi-sweet chocolate chips (you can also use a mix of white and semi-sweet chocolate chips)
- TOPPING
- 3/4 cup (175 mL) SUGAR IN THE RAW® Natural Turbinado Sugar
Oatmeal banana breakfast pizza

In a medium bowl mix oatmeal, milk, egg, sugar and baking powder
- 1 cup oatmeal
- 1 cup milk
- 1 egg
- 1 tbsp vanilla sugar
- 1 tbsp baking powder
- 1 banana

- 2 tsp salt
- 1 tsp ground ginger

Here’s a great recipe I found while browsing Pinterest a while back
- Dressing:
- 1 cup dry quinoa, rinsed
- 1 tbsp olive oil
- 1 3/4 cup water
- 1 can black beans, drained and rinsed
- 1 avocado, chopped into chunks (only allowed in Cycle 3)
- handful cherry tomatoes, quartered
- 1/2 red onion, diced
- 1 small clove garlic, minced
- 1 red bell pepper, chopped into chunks
- small handful cilantro, diced
- 1 limes, juiced
- 1/2 tsp cumin
- 1/2 tbsp olive oil
- salt, to taste
