Marinated Beans

Put beans into 1 1/2 qt. bowl
- Two 1 1-lb. cans (4 cups) cut green beans, drained
- 2/3 cup vegetable oil
- 1/3 cup wine vinegar
- 1/2 tsp. salt
- 1/4 tsp. each onion salt, seasoned salt, dry mustard
Cinnamon Streusel Banana Bread

Preheat oven to 350 degrees
- STREUSEL:
- 1 1/2 cups mashed ripe bananas (about 3 lg.)
- 1 cup sugar
- 1/2 cup butter, melted
- 2 eggs
- 1 tsp. vanilla
- 2 cups flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 3/4 cup chopped walnuts
- 2/3 CUP PACKED BROWN SUGAR
- 1/2 cup flour
- 1/2 tsp. cinnamon
- 4 tbsp. cold butter
- 1/2 cup chopped walnuts
Barbeque Spareribs

Bake ribs 1 hour without water
- Sauce:
- 2 lbs. ribs, rubbed with salt and pepper
- 1 can tomato paste
- 1 clove garlic, minced
- 1/2 tsp cayenne pepper
- 1 tbsp. vinegar
- 1 tbsp. worcestershire sauce
- 1 tbsp. sugar
- 1 medium onion, minced
- 1 bay leaf

Heat the black-eyed peas and add the rice
- 2 cups black-eyed peas, cooked
- 2 cups cooked rice
- 1 small onion, chopped
- 1 small bell pepper, chopped
- Garlic powder to taste
Buttermilk Fudge

Mix buttermilk and soda; set aside for 20 minutes
- 1 cup buttermilk
- 1 tsp. soda
- 4 tbsp. light corn syrup
- 2 cups sugar
- 1/4 tsp. salt
- 1/4 cup butter
- 1 tsp. vanilla
- 1 cups pecans
Fried Ice Cream

Scoop out 4 or 5 balls of ice cream
- 1 pint vanilla ice cream
- 1/2 cup crushed cornflakes or cookie crumbs
- 1 tsp. cinnamon
- 2 tsp. sugar
- 1 egg
- oil for deep frying
- Honey and whipped cream for garnish
Tortilla Soup

In 4 qt. saucepan, saute onion and garlic in oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tbsp. olive oil
- 4 cups chicken broth
- 4 cups beef broth
- 1/2 cup tomato juice
- 1 tsp. cumin
- 1 tsp. chili powder
- 1 fresh jalapeno pepper, seeded and chopped
- 1 tsp. salt
- 3/4 tsp. worcestershire sauce
- 4 corn tortillas
- vegetable oil for frying
- 2 cups shredded cooked chicken
- 1 large tomato, peeled and diced
- 1 lg. avocado, peeled, pitted and sliced
- 1 cup shredded monterey jack cheese
Teriyaki Pasta Salad

Chicken and marinade: Marinate the chicken for at least 1/2 hour in soy sauce and sugar
- 2 to 4 chicken breast halves, boneless & boneless & skinless
- 1 cup soy sauce
- 1/4 cup sugar, optional
- 1-1 lb. box of pasta- any shape: Gemelli, Rotelle, Bowtie
- 1 large head red or green leaf lettuce ( I like red)
- 4 medium sized carrots, matchstick pieces, or 1 bag pre-cut matchstick carrots
- 3-4 cups tomatoes , chopped or grape tomatoes
- 1 cucumber or zucchini seeded and chopped
- 1/2 bunch green onion chopped (optional)
- 1/2 lb. snow peas, cut into thin slices ( optional)
- Toasted sesame seeds
- 1/3 cup * Very Very Teriyaki Sauce (made by Soy Vay)
- 1/4 -1/2 cup canola, vegetable or olive oil ( I like canola best)
- 1-2 Tbsp. water
Cocktail Sauce

Mix all ingredients and chill
- 2/3 cup Ketchup
- 3 Tbsp. lemon juice
- 2 Tbsp. prepared horseradish ( I leave out)
- 3 Tbsp chili sauce
Dinosaur Style Bar-B-Q Beans

1. Heat the olive oil in a large saucepan over medium-high heat
- 2 tbsp. olive oil
- 1/2 large onion, chopped
- 3/4 cup chopped green pepper
- Pinch each of kosher salt and black pepper
- 3 large cloves garlic, chopped
- 8 oz hot Italian sausage, removed from casing
- 2 cans (28 oz each) baked beans, preferably Bush's
- 3/4 cup Mutha Sauce
- 1 tbsp. creole mustard ( preferably Zatarain's) or spicy brown mustard
- 1 tbsp. cider vinegar
- 1 tsp. chili powder
- 1/2 tsp. Creole Seasoning
- 1 tbsp. molasses
