Make Ahead Oriental Salad

Combine vegetables in a large bowl, stirring gently
- 1 (17 oz.) can tiny peas, drained
- 1 (16 oz.) can bean sprouts, drained
- 1 (12 oz.) can whole kernel white corn, drained
- 2 (5 oz.) cans water chestnuts, drained and sliced
- 1 (6 oz.) can sliced mushrooms, drained
- 1 (4 oz.) jar pimiento, drained and sliced
- 1 large green pepper, thinly sliced
- 1 large onion, thinly sliced
- 1 cup salad oil
- 1 cup water
- 1 cup sugar
- 1/2 cup vinegar
- Seasoned salt and pepper to taste
Popovers for Two

Preheat oven to 425. Generously grease four (6oz
- 1/2 cup sifted flour
- 1/4 tsp. salt
- 1/2 cup milk
- 1 egg
Matchstick Potatoes

1. Peel russet potatoes and cut them into 1/8-in
- 3 lbs. russet potatoes, peeled ( about 6)
- 1 About 1 cup cornstarch for light coating
- 1 Quart vegetable oil for frying
Noodle Casserole

Melt the butter in a large skillet
- 1/4 cup (1/2 stick) butter
- One 8 oz. can sliced mushrooms, drained, or 1 cup sliced fresh mushrooms
- 1/4 cup finely chopped onion
- 1/4 cup finely sliced blanched almonds
- 1 clove garlic, minced, or 1/4 tsp. garlic puree
- 1 tbsp. fresh lemon juice
- One 10 3/4 can French onion soup
- 2 cups fine-cut noodles, uncooked
Portuguese Soup

Simmer sausage in 2 cups water 30-45 minutes
- 1 1/2 lbs. polish sauage, sliced
- 5 cups water, divided
- 2 (15 oz.) cans kidney beans, drained
- 2 carrots, diced
- 1/2 head cabbage, coarsely chopped
- 1 medium-size onion, chopped
- 2 medium-size potatoes, diced
- 1/2 green pepper, chopped
- 1 clove garlic, finely chopped
- 1 (8 oz.) can tomato sauce
Green Beans Parmesan

Wash beans; trim ends, and remove strings
- 4 lbs. fresh young green beans
- 2 1/2 cups diced sweet yellow pepper
- 2 cups diced sweet red pepper
- 2/3 cup chopped onion
- 3 cloves garlic, minced
- 1/4 cup vegetable oil
- 3 tbsp. chopped fresh basil
- 1 tbsp. chopped fresh oregano
- 1 tbsp. chopped fresh thyme
- 1/2 tsp. black pepper
- 1 3/4 cups freshly grated Parmesan cheese, divided
Savory Pepper Steak

- 1 1/2 lbs. round steak, cut 1/2 inch thick.
- 1/4 cup flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup liquid shortening
- 1 (8 oz can tomatoes.
- 1 3/4 cups water
- 1/2 cup chopped onion
- 1 small clove garlic, minced
- 1 Tbsp. B.V.
- 1 1/2 tsp. worcestershire sauce
- 2 lg. green peppers, cut in strips
- Hot cooked rice
Creamy New York Cheesecake

Preheat oven 325. Line spring form pan with crumb crust recipe
- 2 8 oz. packages cream cheese, softened
- 1 lb. creamed cottage cheese
- 1 1/2 cups sugar
- 4 eggs, slightly beaten
- 3 tbsp. cornstarch
- 3 tbsp. flour
- 1 1/2 tbp. lemon juice
- 1 tsp. vanilla extract
- 1/2 cup butter, melted
- 1 pint sour cream
- Graham cracker crumbs for 9 inch spring form pan
Chocolate Ganache Cake

Place chocolate and butter in a large bowl; add boiling water and stir until smooth
- GANACHE:
- 2 oz. dark baking chocolate, coarsely chopped
- 2 tbsp. butter
- 3/4 cup boiling water
- 3/4 cup sugar
- 1/4 cup buttermilk
- 1 egg
- 1 tsp. vanilla extract
- 1/2 tsp. orange extract
- 1 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup half and half cream
- 3 oz. dark baking chocolate, coarsely chopped
