South of the Border Artichoke Dip

Preheat oven to 350. Drain the artichokes, pressing out excess moisture
- 1 (14 oz. ) can artichoke hearts
- 1 (4 oz.) can diced green chilies
- 1 cup finely shredded sharp cheddar cheese.
- 1/2 cup cottage cheese
- 1/2 cup light mayonnaise
- 1 tsp. minced garlic
- 1/2 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. tabasco sauce or more to taste
Ham Stroganoff

Melt butter over low heat
- 2 cups diced ham
- 2 tbsp. butter
- 1/2 cup chopped onion
- 1/3 cup sliced green pepper
- 4 oz. can sliced mushrooms
- 10 3/4 oz. can cream of mushroom soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1 tbsp. worchestershire sauce
Lemon Bread

Cream shortening, butter, 1 cup sugar and rind
- 3 tbsp. shortening
- 3 tbsp. butter
- 1 cup sugar
- 1 lemon rind, grated
- 2 eggs
- 1 1/2 cups flour
- 1 tsp. baking powder
- 1/2 cup milk
- 1/2 cup chopped nuts
- juice of 1 lemon
Ham in Cider

1. Place ham and cider in slow cooker
- 3 lb. ham (or larger; whatever fits your slow cooker)
- 4 cups sweet cider, or apple juice
- 1 cup brown sugar
- 2 tsp. dry mustard
- 1 tsp. ground cloves
- 2 cups white seedless raisins
Goodtime Beef Brisket

1. Place brisket in slow cooker
- 3 1/2 to 4 lb. beef brisket
- 1 cup beef broth
- 2 cups tomato sauce
- 2 tsp. prepared mustard
- 2 tbsp. balsamic vinegar
- 2 tbsp. worcestershire sauce
- 1 tsp. garlic powder
- 1/2 tsp. ground alllspice
- 2 tbsp. brown sugar
- 1 small green , or red, bell pepper, chopped
- 1 tsp. salt
- 1/2 tsp. pepper
Mocha Cinnamon Chocolate Chip Cookies

Heat the oven to 350 degrees
- 9 oz. (2 cups) flour
- 1/2 tsp. baking powder
- 3/4 tsp. cinnamon
- 1/4 tsp. salt
- 10 oz. ( 1 1/2 cups) unsalted butter, softened at room temperature
- 3 tbsp. instant espresso powder or 4 tbsp. instant coffee granules, crushed. May be alittle too much.
- 1 cup confectioners sugar
- 1/2 cup packed light brown sugar
- 1 1/2 cups semisweet chocolate chips
- 1/4 About 1/4 cup granulated sugar for dipping
Frozen Fruit Salad

Blend cheese, mayonnaise, lemon juice
- 3 oz. package softened cream cheese
- 1/3 cup mayonnaise
- 1 tsp. lemon juice
- 2 egg whites
- 1/3 cup sugar
- 1 cup whipping cream
- 5 to 6 large marshmallows cut up
- 1/4 cup drained mandarin orange slices
- 1-1 lb.can fruit cocktail, drained
- 2 tbsp. chopped marachino cherries
- 1 tbsp. chopped walnuts
Ham-O-Rama

Halve English muffins. Mix cream cheese, butter, parmesan cheese, and seasonings
- 8 english muffins or other bread
- 1 (8oz) pkg. cream cheese
- 1/2 cup butter
- 1/2 cup Parmesan cheese, grated
- 1 tsp. paprika
- 1/2 tsp. oregano
- 1/2 tsp garlic powder
- Boiled ham, sliced
- 2 medium tomatoes, sliced
Caesar Salad Dressing

Mince freh Garlic very fine, place in small bowl, add remainder of ingredients except grated cheese and mix thoroug...
- 2 medium sized Garlic cloves, minced
- 3 tbsp. Olive Oil
- 1 1/2 tbsp. lemon juice
- 1/2 tbsp. Dijon Mustard
- 3/8 cup mayonnaise
- 2 dashes Worcestershire sauce
- 11 grinds coarse Black Pepper
- 3 grinds Salt
- 3/8 Cup fresh grated Parmesan Cheese
Chicken With Peppers & Sausage

Same as before!
- About 40 minutes befor serving:
- 1/2 1/2 1/2 lb. sausage
- 1 1 1 large red pepper
- 1 1 1 large yellow pepper
- 1 1 1 medium sized red onion
- 3 3 3 tbsp. olive or salad oil
- 1/2 1/2 1/2 tsp dried thyme leaves
- 2 2 2 whole medium-sized skinless boneless chicken breasts
- salt
- pepper
- 4 4 4 tsp. balsamic or red wine vinegar
- thyme sprigs for garnish
- 1 1. 12 1/4 to 5 20 to medium heat, heat sausages and 1/4 cup water to boiling; cover and cook 5 minutes. Remove cover; cook until sausages are browned about 20 minutes, turning sausages frequently and pricking them to release fat.
- 3 3. to to each chicken breast in half; sprinkle lightly with salt and pepper. With slotted spoon, remove sausages to paper towels to drain and cool slightly; thinly slice sausages diagonally.
- 4 4 servings.
