- 1 lb. carrots, scraped and grated
- 1 1/4 cups chopped onion
- 10 3/4 oz. can cream of mushroom soup
- 1 cup corn bread stuffing mix
- 3/4 cup sour cream
- 1 tsp. lemon juice
- 1/4 tsp. salt
- 1/8 tsp pepper
- Pinch of sugar
- 6 tbsp. margarine, melted
- 2 eggs, beaten
- Paprika (optional)
Spanish Green Beans

Empty green beans into sauce pan, do not drain
- 1 can green beans
- 1 can tomatoes
- 4 slices bacon
- 1/2 onion or 1 small onion
- Dash red pepper
- Salt to taste
Mocha Frosting

Mix all ingredients. Spread on cooled cake
- 5 Tbsp. butter
- 3 cups powdered sugar
- 1 egg yolk
- 1 1/2 Tbsp. cocoa
- 2 Tbsp. hot coffee
Chicken Pot Pie

Preheat oven to 425 Degees
- 12 oz. Cream cheese, cubed
- 1/2 cup chicken broth
- 3 cups chopped cooked chicken or turkey
- 2 pkgs. frozen mixed vegetables, thawed (10 oz. ea.)
- 1 envelope Good Seasons italian salad dressing
- 1/2 (15 oz.) pkg. refrigerated pie crust (1 crust)
Taco Salad

Brown beef in skillet; drain
- May prepare partially ahead.
- 1 lb. ground beef
- 1 1 1/4 oz envelope taco seasoning mix
- 3/4 cup water
- 1 head iceberg lettuce, shredded
- 2 ripe tomatoes, chopped
- 1 cup grated cheddar cheese
- 1/3 cup ripe olives, halved
- 3/4 cup sour cream
- 1 or 2 green chilies, chopped
- tortilla chips
Fruit Salad

Drain fruit well. Mix marshmallows, coconut, pineapple and sour cream
- 1 cup marshmallows
- 1 cup coconut
- 1 cup mandarin oranges
- 2 cups pineapple tidbits
- 1 carton sour cream

Cream together butter and sugar with electric mixer
- FROSTING:
- 1 cup butter or butter Crisco
- 2 tsp. baking soda
- 1 egg
- 1 tsp. vanilla
- 1 cup sugar
- 3 cups flour
- a few tbsp. of milk as necessary
- 4 tbsp. softened butter
- 2 cups powdered sugar
- a few Tbsp. milk to make frosting spreading consistency
Sweet and Sour Beef Short Ribs

Sprinkle ribs with salt and pepper; place on a rack in a roasting pan
- 6 lbs. lean beef short ribs
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 cup vinegar
- 3 tbsp. cornstarch
- 1 tsp. paprika
- 1 cup firmly packed brown sugar
- 1/4 tsp. ground ginger
- 1 (8 1/4 oz.) can crushed pineapple, undrained
- 2 tbsp. soy sauce
- 3/4 cup water
Vinaigrette Salad Dressing

Process first 7 ingredients in blender until smooth
- 1/2 cup apple cider vinegar (used white vinegar)
- 3 tbsp. chopped onion
- 2 1/2 tbsp. sugar
- 1 large garlic clove
- 1 tsp. salt
- 1 tsp. dry mustard
- 1/2 tsp. pepper
- 1 cup vegetable oil
