Apple Betty

Mound apples in buttered 9-in pie plate; sprinkle with orange juice
- 4 cups sliced pared tart apples
- 1/4 cup orange juice
- 1 cup sugar
- 3/4 cup flour
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 cup butter
Mushroom Sauce

Saute mushrooms in 2 tbsp
- 1/2 lb. fresh mushrooms, sliced
- 3 tbsp. melted butter, divided
- 1 tbsp. flour
- 3/4 cup half and half
- 1 tsp. soy sauce
Mexican Chicken

Heat oil in Dutch oven. Coat chicken with flour
- 3 tbsp. vegetable oil
- 3 to 3 1/2 lb. broiler fryer chicken , cut up
- 1/2 cup flour
- 2 1/2 cups chicken broth
- 1 1/2 to 2 tsp. chili powder
- 1/2 tsp. salt
- 1/8 tsp. pepper
- Dash of ground red pepper (cayenne)
- 1 medium onion, chopped
- 1 clove garlic, finely chopped
- 1 can (28 oz.) whole tomatoes, undrained
- 1 cup uncooked regular long grain rice
- 1 cup frozen corn or 1 can 98 oz.) whole kernel corn, undrained
- 1 can (8 oz.) kidney beans, undrained
Bird Seed

In a very large container ( see note), mix all ingredients, tossing gently
- 1 (1 lb.) jar dry roasted peanuts
- 1 (14 to 16 oz.) bag plain M&M's
- 1 (14 to 16 oz.) bag peanut M&M's
- 1 (12 oz.) jar dry roasted cashew nuts
- 1 (10 to 11.5 oz.) can mixed nuts
- 1 (15 oz.) box raising
- 1 (14 to 15 oz.) bag pretzel sticks
- 1 (10 to 12 oz.) package sesame sticks
- 1 (8 oz.) bag yogurt covered raisins
- 8 oz. yogurt covered peanuts ( see note)

- 1 1/2 oz. ground pepper

Famous Buttermilk Pancakes

Put the flour, brown sugar, baking powder and baking soda into a large bowl
- 3 cups flour
- 3 tbsp. light brown sugar
- 1 1/2 tsp. baking powder
- 1 1/2 tsp baking soda
- 3 eggs 3 cups buttermilk
- 8 oz. (1 stick) butter, melted and allowed to cool but not to solidify
Argentine Steak With Chimichurri Sauce and Fried Potatoes

1. Sauce: Whisk together olive oil and vinegar in medium size bowl
- Chimichurri Sauce:
- 2/3 cup olive oil
- 2 tbsp. red-wine vinegar
- 1 small onion , chopped
- 2 cloves garlic, finely chopped
- 1/2 cup finely chopped fresh parsley
- 1/2 tsp. red-pepper flakes
- 1/2 tsp. salt
- Steak and Fried Potatoes:
- 2 lbs. baking potatoes, peeled and cut ito 4x 1/4 inch fries
- 6 qts. canola or vegtable oil
- 1 beef flank steak or skirt steak (2 lbs.)
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 4 cups assorted baby greens
Nancy's Coleslaw

In a medium bowl, combine the onion and sugar and let stand for 30 minutes
- 1 medium onion, chopped
- 1 cup sugar (maybe alittle less sugar)
- 1 cup vegetable oil
- 1/2 cup cider vinegar
- 1/3 cup mayonnaise
- 1 tsp. salt
- 1/2 tsp. celery seed
- 1 medium green cabbage, cored and shredded
Remoulade Sauce for Seafood

Combine all ingredients in a small bowl; mix until well blended
- 1 cup mayonnaise
- 1 tbsp. chopped onion
- 1 tbsp. chopped parsley
- 1 tbsp. chopped celery
- 2 tbsp. mustard
- 1 tbsp. prepared horseradish (sub)
- 1 tsp. paprika
- 1/2 tsp. salt
- Dash of hot sauce
- 1/4 cup salad oil
- 1 tbsp. vinegar
- 1/2 tsp. worcestershire sauce
