Chicken Curry

In saucepan, melt butter; add celery, onion, and garlic
- 1 Tbsp. butter
- 1 cup sliced celery
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 2 tbsp cornstarch
- 2 to 3 tsp. curry powder
- 3/4 cup cold chicken broth
- 2 cups milk
- 2 cups diced cooked chicken
- 1 3oz. can sliced mushrooms, drained (1/2 cup)
Baked Chicken Breasts

Place chicken breasts in a 9x13 baking dish
- Oven Temperature: 350
- 4 large chicken breasts, skinned and boned
- 1 can cream of mushroom soup
- 1 6 oz can mushrooms, undrained
- 1 12 oz. carton sour cream
- 1/2 cup dry white wine ( sub chicken broth)
- salt
- pepper
Golden Rice Casserole

Combine rice, tomatoes, mushrooms, green pepper, onion and seasonings
- 3 cups cooked rice
- 2 cups (1 lb. can) tomatoes, drained
- 1 3 oz. can sliced mushrooms, drained
- 2 tbsp. chopped green pepper
- 2 tbsp. chopped onion
- Salt and pepper
- 1/2 lb. pasteurized process cheese spread, sliced
- 2 hard-cooked eggs, cut in wedges

Marinara Sauce

In 3 qt. saucepan, heat olive oil and saute garlic until golden brown
- 1/4 cup olive oil
- 2 tbsp. minced garlic
- 2 tbsp. minced basil or 1/2 tsp dried basil
- 1/2 tsp. dried parsley
- 2 16 oz. cans stewed italian tomatoes, crushed
- 1/4 tsp. salt
- 1/4 tsp. black pepper
Remoulade Sauce

Place the parsley, green onions, capers, and garlic in a blender or food processor and combine
- 1/3 cup chopped fresh parsley
- 1/3 cup chopped green onions, white and green parts
- 2 tbsp. capers with juice
- 1 clove garlic, minced
- 1 cup mayonnaise
- 3 tbsp. olive oil
- 3 tbsp. fresh lemon juice
- 1/2 tsp. mustard
Marinated Roast Beef

Mix together wine vinegar, oil, tomato sauce, salt, mustard, thyme leaves, pepper, celery seed, cloves, garlic powd...
- 1 3/4 cups wine vinegar ( this was too much vinegar)cut back on this
- 1 cup vegetable oil
- 8 oz can tomato sauce
- 2 tsp. salt
- 2 tsp powdered mustard
- 1 1/2 tsp. thyme leaves
- 1 tsp. coarse ground pepper
- 1 1/2 tsp. celery seed
- 3/4 tsp. ground cloves
- 1 tsp. garlic powder
- 1/4 cup dry minced onion
- 5- 6 lb. boneless, lean beef roast
- 1/4 cup dry minced onion (additional)
- 1/2 cup dry vegetable flakes (optional)
- 1 cup water

- 1 tsp. dried Italian seasoning

- 1 1/2 cups prepared hummus
- 1 cup chopped cucumber

- 1/2 cup chopped pitted olives
- 1/2 cup crumbled feta cheese

Four Beans and Sausage

1. Combine all ingredients in slow cooker
- 15 oz. can Great Northern beans, drained
- 15 1/2 oz. can black beans, rinsed and drained
- 16 oz. can red kidney beans, drained
- 15 oz. can butter beans, drained
- 1 1/2 cups ketchup
- 1/2 cup chopped onions
- 1 green pepper, chopped
- 1 lb. smoked sausage, cooked and cut into 1/2 inch slices
- 1/4 cup brown sugar
- 2 garlic cloves, minced
- 1 tsp. Worcestershire sauce
- 1/2 tsp. dry mustard
- 1/2 tsp. tabasco sauce
Croutons

Allow bread cubes to sit overnight to become stale
- 1 Loaf of reg or sandwich bread
- peanut oil, for frying
- dash dried parsley
- dash parmesan
- dash House Seasoning, recipe follows.
- House Seasoning;
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- Mix ingredients together and store in an airtight container for up to 6 mo.

- 3/4 tsp. ground cinnamon
