Fettuccine Carbonara

Cook fettuccine. Set aside
- 1/4 cup butter
- 1/2 cup green onions
- 4 1/2 oz. can mushrooms
- 8 oz. pkg. cream cheese, cubed
- 1 1/2 cup milk
- 1 1/2 cup julienne cut, cooked ham (Buddig works great)
- 1/2 cup Parmesan cheese
- Pkg. Fettuccine
Joe's Mustard Sauce

Beat all ingredients three full minutes
- 3 1/2 tsp. dry mustard ( or to taste)
- 1 cup mayonnaise
- 2 tsp worcestershire sauce
- 1 tsp. A-1 sauce
- 1 1/2 tbsp. light cream
- 1/8 tsp. salt

- When deep-fat frying, try adding a tbsp. of vinegar to the fat before heating. This will keep the food from absorbing too much of the fat.
Cajun Sausage and Beans ( Slow Cooker)

1. Combine all ingredients in slow cooker
- 1 lb. smoked sausage, sliced into 1/4 in pieces
- 16 oz. can red beans
- 16 oz. can crushed tomatoes with green chilies
- 1 cup celery, chopped
- half an onion, chopped
- 2 tbsp. Italian seasoning
- Tabasco sauce to taste
Asian Sauteed Spinach

Heat oil in saute pan on medium heat
- 1 1/2 lbs. spinach--cleaned and stemmed
- 1 tbsp. hoisin sauce
- 1 tsp. soy sauce
- 1 garlic clove--peeled and finely minced
- 1 tsp. lemon or lime juice
- Pinch red pepper flakes
- 1 tbsp. olive oil
Fresh Strawberry Sorbet

Bring the sugar and 2 cups water to boil in a medium saucepan over medium-high heat
- 2 cups sugar
- 2 cups water
- 4 pints strawberries, hulled and sliced
- 1/4 cup fresh lime juice
- 1/2 cup light corn syrup
Coffee Toffee Frozen Dessert

Combine crumbs and melted butter; press into the bottom of an 8x8 inch baking pan or springform pan
- 1 cup chocolate wafer crumbs
- 2 tbsp. butter, melted
- 1/2 cup butter
- 3/4 cup sugar, divided
- 4 egg yolks
- 1 (1 oz.) square unsweetened chocolate, melted
- 2 tsp. instant coffee granules
- 1/2 tsp. vanilla extract
- 4 egg whites
- 3 (3/4 oz.) chocolate-covered toffee bars, crushed
Caprese Salad

Cut tomatoes into 1/4 inch slices
- 1 tomato per person ( the best you can find)
- 5 About 5 basil leaves per tomato
- 4 oz. fresh mozzarella per tomato ( buffalo milk mozzarella from Italy)
- 1 tsp. olive oil per tomato
- Sea SAlt or Kosher salt to taste
Potatoes With Mushrooms and Cheese

Season potatoes with salt and pepper
- 4-5 potatoes, peeled and thinly sliced
- 1 tsp. salt
- 1/2 tsp pepper
- 1 clove garlic
- 1/2 cup butter
- 1 lb. mushrooms, sliced
- 1 cup grated Swiss cheese
- Small bunch parsley, chopped
- 1 medium onion finely chopped
- 1 pt. whipping cream
- Extra grated Swiss cheese
- Butter
Instant Chocolate Pie

Prepare pudding mix according to directions, using only 1 cup milk
- 1 8-inch pie shell, baked
- 1 (4 1/2 oz.) pkg. instant chocolate pudding mix
- 1 cup milk
- 2 cups non dairy whipped topping
- 1/4 cup chopped pecans
- Chopped pecans
