Hearty Taco Dip

In a large saucepan over medium heat, cook beef, onion and pepper until meat is no longer pink; drain
- 1 lb. ground beef
- 1 medium onion, chopped
- Dash pepper
- 1 lb. process cheese product, cubed
- 1 bottle ( 8 oz.) taco sauce
- 1/4 cup water
- 1 medium tomato, chopped
- 1 medium green pepper, chopped
- 1 can (2 1/4 oz.) sliced ripe olives, drained
- Tortilla chips
Chicken Fried Steak

Pound steak 1/4 in. thick; cut in serving pieces
- 1 1/2 lbs. beef top round steak, 1/2 in. thick
- 1 beaten egg
- 1 tbsp. milk
- 1 cup cracker crumbs
- 1/4 cup oil
Baked Apples

Baked apples are so very good and can be served along with baked ham or roasted turkey as part of the meal
- Caramel Sauce:
- 6 same-size granny smith apples
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 cup sugar
- 2 tbsp. butter
- 1 cup apple juice
- 6 sprigs fresh mint
- 8 tbsp. (1 stick) butter
- 1 cup light brown sugar
- 1/4 cup evaporated milk
- 1/2 tsp vanilla
Crispy Potato Pancakes

Finely grate potatoes; drain any liquid
- 2 medium potatoes, peeled
- 1 egg
- 1/3 cup chopped onion
- 1 tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. garlic powder
- Vegetable oil

Baking tips. PAULA DEEN'S KITCHEN CLASSICS
- Add flour and milk to egg mixture alternately, beginning with flour mixture and ending with flour mixture for a lighter cake, muffin, or biscuit.
- To determine whether and egg is fresh or not, place the uncracked egg in a glass of water. If it sinks to the bottom, it's fresh. If it floats, throw it out.
- Sub 1 2/3 cups flour for 2 cups cake flour.
- Sub for buttermilk: 1 tsp. distilled white vinegar to 1 cup fresh milk; let sour for 5 minutes.
- Corn Syrup: 1 1/2 cups corn syrup equals 1 cup sugar dissolved in 1/2 cup water.
- Lighter texture: Add a tsp. of baking powder to any recipe calling for self-rising flour or self rising cornmeal
- Sweetened Condensed milk: 6 cups whole milk with 4 1/2 cups sugar, 1 stick of butter, 1 tbsp. vanilla. Cook over med. heat, reducing liquid for 1 hour. Cool.
Famous Pumpkin Pie

Mix sugar, salt, cinnamon, ginger and cloves in small bowl
- 1 unbaked 9 inch (4 cup volume ) deep-dish pie shell
- 3/4 cup sugar
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 2 large eggs
- 1 can (15 oz.) pure pumpkin
- 1 can (12 oz. ) carnation evaporated milk
Teriyaki

For Marinade, combine soy sauce, salad oil, molasses, ginger, dry mustard, and minced garlic cloves; mix well
- If desired, weave canned pineapple chunks with the meat. Use the marinade on steaks, too---
- 1/2 cup soy sauce
- 1/4 cup salad oil
- 2 tbsp. molasses
- 2 tsp. ground ginger
- 2 tsp. dry mustard
- 6 cloves garlic, minced
- 1 1/2 lbs. beef chuck or round steak, cut 1 inch thick
- Instant unseasoned meat tenderizer
Pineapple Cheese Salad

Drain pineapple juice into saucepan
- 1 (20 oz.) can chunk pineapple
- 1 lb. marshmallows (cut large into 4 pieces or use miniatures
- 1/2 lb. cheese, shredded
- 2 eggs
- 2 tbsp. flour ( or 1 heaping tbsp. cornstarch for clearer sauce)
- 1/2 cup sugar
- nuts, optional
Creamy Kidney Bean Salad

Rinse and drain beans. Mix with green onion and celery
- 2 16 oz. cans kidney beans, drained
- 1 cup thinly sliced green onion tops
- 1 cup finely chopped celery
- 1/2 cup sour cream
- 1/3 cup mayonnaise
- 1/4 cup catsup
- 3 tbsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. Tabasco
- 1/8 tsp. pepper
Pralines

- 2 cups sugar
- 1 cup milk
- 8 large marshmallows
- 2 tbsp. butter
- 1/2 tsp. vanilla extract
- 1 to 2 cups pecans
