- For the brine:
- 1 (14-16 lb.) frozen young turkey
- 1 cup kosher salt
- 1/2 cup light brown sugar
- 1 gallon vegetable stock
- 1 tbsp. black peppercorns
- 1 1/2 tsp. allspice berries
- 1 1/2 tsp. chopped candied ginger
- 1 gallon heavily iced water
- For the aromatics:
- 1 red apple, sliced
- 1/2 onion, sliced
- 1 cinnamon stick
- 1 cup water
- 4 sprigs rosemary
- 6 leaves sage
- canola oil
Steak Butter

Mix butter in electric mixer, at medium speed, until well blended
- 1/2 lb. butter
- 1 clove Garlic, minced
- 2 tbsp. lemon juice
- 1 tbsp. chopped chives or green onion tops
- 1 tbsp. basil
- 1 tsp. hickory salt
- 1 tsp. paprika
- 1/2 tsp. salt
- 14 tsp. pepper

- 2 cups chopped onions
- 3 lbs ground beef
- 2 cups barbecue sauce or ketchup
- 1 cup mustard

Coffee-Toffee Pie

PASTRY SHELL: Combine piecrust mix, brown sugar, walnuts, chocolate, vanilla and water

- 1/2 package pie crust mix
- 1/4 cup light brown sugar
- 3/4 cup finely chopped walnuts
- 1 oz. unsweetened chocolate, grated
- 1 tsp. vanilla
- 1 tbsp. water
- FILLING:
- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 oz. unsweetened chocolate, melted and cooled
- 2 tsp. instant coffee
- 2 eggs
- TOPPING:
- 1 cup heavy cream, shipped
- 2 tsp. instant coffee
- 1/2 cup powdered sugar
Baked Grits

Preheat oven to 350 degrees
- 4 cups water
- 1 1/2 tsp. salt
- 1 cup uncooked grits
- 2 eggs, beaten
- 8 tbsp (1 stick) butter
- 1 1/2 cup grated monterey jack and cheddar cheese (combined)
- 2 cloves garlic, crushed
- Dash of cayenne pepper
