Smoky Chipotle Grilled Babyback Ribs

Preheat oven to 325 degrees Remove membrane from back of ribs if still attached
- THE RIBS:
- 2 slabs of baby back ribs (3 1/2 -4 lbs. )
- 1 1/2 cup apple cider
- 1 cup water
- THE RUB:
- 2 tbsp. brown sugar
- 2 tsp. salt
- 2 tsp. garlic salt
- 1 tbsp. chili powder
- 1 tbsp. paprika
- 2 tsp. black pepper
- THE SAUCE:
- 1 28 oz. can crushed tomatoes juice included
- 1/2 cup honey
- 1/2 cup light brown sugar
- 2 chipotle peppers in adobo, minced
- 1/2 sweet onion, chopped
- 1/2 cup apple cider vinegar
- 1/2 cup apple cider
- 3 limes
- 4 cloves garlic, minced
- 1 1/2 tbsp. dry mustard
- 2 tsp. salt
- 1 tsp. black pepper
- 1 tsp cumin
Guacamole

Mix all ingredients together, but do not blend
- 2 large avocados, mashed
- 3 tbsp. lemon juice
- 1 small onion, chopped fine
- 1 small green chili
- 1 tomato, peeled, seeded and chopped
- 1 tsp. Worcestershire sauce
- Dash cayenne
- 1/2 tsp. coriander
- Salt to taste
- 1 garlic clove, crushed
- 3 tbsp. mayonnaise
Green Rice Casserole With Chicken

Mix all ingredients together and put into a 9x13 baking dish
- 1 16 oz. package frozen chopped broccoli, thawed
- 3 cups cooked rice, cooked with water and 2 chicken bouillon cubes or pure chicken broth
- 3 eggs, well beaten
- 3/4 cup, chopped onion browned in 3/4 stick butter ( 6 tbsp butter)
- 2 cans cream of chicken soup
- 1 1/2 cups shredded cheese
- 2 cups cooked, cubed chicken ( deli rotisserie chicken works great) or 2 small cans of chicken
Fried Devil Dogs

Combine egg, milk, and oil
- 1 egg, slightly beaten
- 1/2 cup milk
- 1 tbsp. salad oil
- 3/4 cup flour
- 1/2 tsp. salt
- 1/2 tsp baking powder
- 1/2 tsp. dry mustard
- 1/8 tsp. red pepper
- 8 frankfurters, cut into 1-inch pieces
- 1 cup fine dry breadcrumbs
- Hot salad oil
