Combine marinade ingredients in a shallow nonmetal container
- 1/2 cup cooking oil
- 1/3 soy sauce
- 1/4 cup red wine vinegar ( I don't use)
- 2 tab. lemon juice or less
- 1 tab. worcestershire sauce
- 1 tsp. dry mustard
- 1 clove garlic, minced
- 1/4 tsp. pepper
Rice Milanese

Melt 2 tbsp. butter with olive oil in a saucepan
- 1/4 cup butter
- 2 tbsp. olive oil
- 1 cup rice
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 3 1/2 cups hot chicken broth
- 1/2 tsp. saffron
- 3 tbsp. warm water
- 1/2 cup grated Parmesan cheese
Lexington Style Grilled Chicken

Place half each of vinegar mixture and chicken in a lare zip-top plastic freezer bag; seal
- 2 2 2 cups cider vinegar
- 1/4 1/4 1/4 cup firmly packed dark brown sugar
- 1/4 1/4 1/4 cup vegetable oil
- 3 3 3 tbsp. dried crushed red pepper
- 4 4 4 tsp. salt
- 2 2 2 tsp. pepper
Baked Swiss Steak

Cut meat into 2 portions; pound 1/4 inch thick
- 1/2 to 3/4 lb. boneless round steak, about 3/4 inch thick
- 1/2 tsp. salt
- 2 tbsp. flour
- 2 tbsp. salad oil
- 1 (8 oz.) can stewed tomatoes
- 1/4 cup chopped carrots
- 1/4 cup chopped celery
- 1 tbsp. chopped onion
- 1/4 tsp. worcestershire sauce
- 2 tbsp. shredded sharp process american cheese
Chicken Casserole

Combine chicken, mayonnaise, and chopped onion and set aside
- 1 fryer, cooked, boned, and cut into small pieces (reserve broth)
- 1/2 cup mayonnaise
- 1/2 cup chopped onion
- 4 eggs
- 8 tbsp. (1 stick) butter, melted
- 2 1/2 cups chicken broth
- 1 package pepperidge farm corn bread stuffing mix
- 1 cup milk
- One 10 3/4 oz. can condensed cream of chicken soup
Shrimp Chowder

1. In a small skillet, saute onion in butter until tender
- 1/2 cup chopped onion
- 2 tsp. butter
- 2 cans (12 oz. each) evaporated milk
- 2 cans (10 3/4 oz. each) condensed cream of potato soup, undiluted
- 2 cans (10 3/4 oz. each) condensed cream of chicken soup, undiluted
- 1 can (11 oz.) white or shoepeg corn, drained
- 1 tsp. creole seasoning
- 1/2 tsp. garlic powder
- 2 lbs. cooked small shrimp, peeled and deveined
- 1 pkg. (3 oz.) cream cheese, cubed
