Creamy Quinoa with Baby Bok Choy - Gluten & Dairy Free

1.Add broth, quinoa, sundried tomatoes, onion, garlic, dry spices and balsamic vinegar into a large stockpot
- 1-1/4 cup vegetable broth, no salt added
- 1/2 cup quinoa, (I use Trader's Joe's tricolor), rinsed
- 4 sundried tomatoes (unsulphured), cut into thin slivers
- 1/2 small onion diced
- 4 cloves of garlic, smashed then slivered
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon fennel seeds
- 1/4 teaspoon red pepper flakes
- 2 tablespoons Balsamic vinegar
- 1-1/2 lbs baby bok choy, keep ends intact cut into 1" pieces
- 1 cup white beans
- 2 ounces raw, hulled unsalted sunflower seeds
- Juice from 1/2 a lemon
- 1/2 cup of water
Whipped Cauliflower, Low-Carb

Bring a pot of water to a boil
- 1 head cauliflower, cut into florets
- 1/4 cup Parmesan cheese
- 1 tablespoon cream cheese at room temperature
- 2 teaspoons chicken soup base
- 2 teaspoons roasted garlic, or to taste
- 1 1/2 teaspoons butter at room temperature
- 1/2 teaspoon milk, or to taste (optional)
- salt and ground black pepper to taste
Spaghetti with White Bean Sauce

Directions Prepare the sauce: heat the olive oil in a non-stick frying pan
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 red onion, very finely chopped
- 1 red bell pepper, cut into 1/4-inch dice
- 1 cup cooked white beans
- 1 cup chicken stock
- 1/4 cup finely chopped flat-leaf parsley
- 1/2 teaspoon hot pepper flakes
- Salt and freshly ground black pepper
- 8 to 10 ounces spaghetti
- Freshly grated Parmigiano-Reggiano for serving
