Manhatten Meatballs *

Great Appetizer
- Sauce:
- 1 lb lean ground beef
- 1 lb lean ground pork
- 2 cups soft bread crumbs
- 2 eggs
- 1/2 cup chopped onion
- 2 tlbs fresh minced parsley or 2 tsp dried parsley flakes
- 2 tsp salt
- 1/2 tsp garlic salt
- 1 (12 oz) jar apricot preserves
- 3/4 cup barbecue sauce (more if you prefer)
Lemon Cheesecake Jello *

Dissolve Jello in water. Add sugar
- 4 1/2 c. boiling water
- 3 sm. pkg. lemon Jello
- 6 tbsp. sugar
- 2 c. graham cracker crumbs
- 1 stick butter, melted
- 2 (8 oz.) pkg. cream cheese
- 1 lg. container Cool Whip
Stuffed Pepper Soup *

Soup
- Brown the above ingredients and drain well. Now add:
- 2 lbs ground beef
- 1 lg onion chopped
- 5 green peppers, chopped
- 6 cans of Tomato Soup and 5 soup cans of water
- 1 can of beef broth & 1 broth can of water
- 2 tsp of Brown Sugar
- 2 small cans of Tomato Sauce
- 3/4 cup of uncooked white rice
Party Potatoes ***

Side Dish
- 1 (32 oz.) pkg. frozen hash browns
- 1 can Cream of Chicken Soup or 1 can of Cream of Mushroom Soup
- 3/4 c. milk
- 1 c. sour cream
- 2 c. shredded cheddar cheese
- 1/2 c. chopped onion
- 1 1/2 c. lightly crushed corn flakes
- 1/2 c. melted butter
Grilled Chicken Breasts with Cucumber-Peach Salsa

1 Heat gas or charcoal grill
- 1/2 cup chopped cucumber
- 1/3 cup peach preserves
- 1 tablespoon chopped fresh mint leaves or 1 teaspoon dried mint flakes
- 1/4 teaspoon salt
- 2 tablespoons chopped red onion
- 1 peach or nectarine, peeled, chopped (3/4 cup)
- 4 boneless skinless chicken breasts (about 1 1/4 lb)

Preheat oven at 375 degrees SHUT OFF when correct temperature is reached
- 2 egg whites
- 1 tsp cream of tartar
- 3/4 c sugar
- 1 tsp mint exract
- 1 pinch of salt
- 1 6oz bag of chocolate chips or more
Bacon and Pesto Pasta Salad

In medium saucepan, cook pasta according to package directions until al dente
- 1 pound rotini
- 8 bacon slices, cooked until crispy, crumbled
- 1 cup shredded Parmesan cheese, plus more for garnish
- 1 cup (two 4-ounce jars) roasted red pepper strips
- 1/2 cup thinly sliced red onion
- 1/2 cup oil-packed sun-dried
- tomatoes
- 1 cup packed basil leaves
- 1/4 cup lemon juice (from 3 to 4 lemons)
- 2 tablespoons chopped garlic
- 2 tablespoons kosher salt
- 1 tablespoon freshly ground black pepper
- 1 cup olive oil
Peaches 'n Cream Cake

Heat oven to 350°F (or 325°F for dark or nonstick pan)
- 1 box Betty Crocker® SuperMoist® yellow cake mix
- 1/4 cup Gold Medal® all-purpose flour
- 1 cup Yoplait® Original 99% Fat Free creamy harvest peach yogurt (from 2-lb container)
- 1/2 cup water
- 1/4 cup vegetable oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 3 eggs
- Topping
- 1 1/2 cups frozen (thawed) reduced-fat whipped topping
- 1 cup Yoplait® Original 99% Fat Free creamy harvest peach yogurt (from 32-oz container)
- 2 cups frozen sliced peaches (from 16-oz bag), thawed, drained

Preheat oven to 350 degrees
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 egg
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 2 cups AP flour
- 1/2 tsp kosher salt
- 1/2 cup walnuts, chopped
- 1/2 cup white chocolate chips
- 1 , 10 oz. jar raspberry jam
- 3/4 cup powdered sugar
- 1/4 tsp almond extract
- Juice of 1/2 lemon
Rolled Cabbage

Bosak Polish Cabbage
- 1 Head of Cabbage
- 1/4 LB Salt Pork
- 1 1/2 LBS Ground Beef
- 1/2 LB Ground Pork
- 1 - 32oz (large) can tomato juice 32oz
- 1 - 15oz can tomato sauce
- 1 - 15oz can diced tomatos
- 1/2 PKG Rice (16oz box of long grain white rice)
- 2 Large onions (Chopped)
- 1 TSP Salt
- 1/2 TSP pepper
- SAUCE
- 1/4 remaining salt pork and onion mixture
- 1 can tomato sauce and diced tomatoes
- Cook for five minutes then add tomato juice
- Cook for another five minutes.
