Slow-Cooked Pulled Pork Shoulder

Place the pork shoulder into the ceramic bowl of a slow cooker
- 1 (3 pound) pork shoulder
- 4 cups water, or as needed
- 8 cups apple cider vinegar, or as needed
- 1/4 cup kosher salt
- 1 large onion, cut into 8 wedges
- 1 Tbsp ground cumin
- 1 Tbsp ground mustard
- 1 Tbsp chili powder
- 1/2 cup brown sugar
- BBQ sauce
Queso Smothered Chicken

1. Pour marinade over chicken and marinade in the refrigerator for 30 minutes or over night
- 1 bottle Lawry's Baja Chipotle or Mesquite 30 minutes marinade
- 4 boneless chicken breasts, pounded to even thickness
- 8 oz. Velveeta, chopped
- 1 can RoTel diced tomatoes and green chilies
- rice (optional)
Lemon Butter White Wine Sauce

Heat wine, juice, garlic and onion
- 2 parts wine
- 3 parts lemon juice
- equal parts garlic and onion to taste
- butter
- white pepper
Caramel Apple Salad

In a large bowl, mix together the dry pudding, whipped topping, pineappkle and juice until well blended
- 1 small package of sugar free/fat free instant butterscotch pudding
- 8 oz carton fat free Cool Whip, thawed
- 8 oz can crushed pineapple in juice
- 1 cup miniature marshmallows
- 3 cups (or more) chopped apples, leave on skin
- OPTIONAL: 1 cup dry roasted peanuts
Cinnamon Burst Biscuits

Add the cinnamon chips and the sugar to the mix and stir
- 3 cups just-add-water buttermilk biscuit mix
- 3/4 cup cool water
- 3/4 cup cinnamon chips
- 1/4 cup granulated sugar
- 2 teaspoons brown sugar flavor
- melted butter for brushing on the biscuits
- cinnamon sugar for sprinkling
Low -Carb Taco Meatballs

- 1-1/2 pound lean ground beef
- One package taco seasoning mix
- One green onion, finely diced
- Two eggs or egg beaters
- One block cheddar cheese, cut into small cubes

- 1 cup shortening (Crisco)
- 1 cup packed brown sugar
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 3 cups quick oats

Preheat oven to 450. Grease 12 muffin cups and set aside
- 2 cups flour
- 4 tsp baking powder
- 1/2 tsp cream of tartar
- 1/4 tsp salt
- 1/4 cup shortening
- 3/4 cup milk
- 2 Tbsp sugar
- 1 tsp cinnamon
Cheesy Beef Stroganoff

In large skillet, brown the ground beef; drain
- 1 lb ground beef
- 2 cups water
- 2 cups noodles
- 8 oz. Velveeta, cubed
- 1 can mushroom soup

Heat oven to 350 degrees. Combine butter and brown sugar in large bowl
- Crust:
- 1 C butter, softened
- 1 C firmly packed brown sugar
- 2 C uncooked quick cooking oats
- 1 C flour
- 1 C chopped pecans
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp allspice
- Filling:
- 1 C sour cream
- 3/4 C sugar
- 2 Tbsp flour
- 1 egg
- 2 medium (about 2 cups) apples, unpeeled, shredded (I missed the unpeeled part and peeled mine)
