Preheat oven to 425. Line a baking sheet with foil
- 2 1/2 lbs russet potatoes (not peeled)
- 1/2 Tbsp vegetable oil
- 2 tsp sugar
- 1 tsp salt
- pepper
Chicken Fettuccine Alfredo

Cook fettuccine according to pkg directions
- 1 12 oz pkg fettuccine
- 8 bacon strips, cut into 1" pieces
- 1 lb chicken breasts, cubed
- 2 cups fresh mushrooms
- 6 green onions, thinly sliced
- 1 garlic clove, minced
- 1 1/2 cups half-and-half
- 1/2 cup cup shredded Parmesan cheese
- 1 tsp paprika
- 1/2 tsp pepper
- Additional shredded Parmesan cheese
Chicken Portobello with Mashed Red Potatoes

Place potatoes in a large saucepan and cover with water; bring to a boil
- 1 1/2 lb red potatoes, cubed
- 1/4 cup flour
- 1 1/4 tsp salt, divided
- 1 1/4 tsp sage, divided
- 1/2 tsp thyme
- 1/2 tsp pepper
- 4 chicken breasts
- 2 Tbsp olive oil
- 3/4 lb sliced baby portobello mushrooms
- 1 8 oz pkg cream cheese, softened and divided
- 1 1/4 cups chicken broth, divided
Burgers Stroganoff

- 1 1/2 lb ground beef
- 1 can mushroom soup
- 2 Tbsp Ketchup
- 1/3 cup sour cream
Teriyaki Chicken Breasts with stir-fry veggies for 2

1. Mix together broth, sherry, brown sugar, 2 tsp ginger, soy sauce, vinegar and lemon juice
- Veggies:
- 3 Tbsp chicken broth
- 2 Tbsp sherry or dry white wine
- 1 Tbsp brown sugar
- 3 tsp minced fresh ginger, divided
- 4 tsp soy sauce
- 1 tsp balsamic vinegar
- juice of 1/2 lemon
- 2 boneless, skinless chicken breasts
- 2 tsp olive oil, divided
- 1 cup frozen broccoli florets, thawed
- 1/2 cup shiitake mushrooms
- 1/2 cup diced red onion
- 1/2 cup bean sprouts
Cucumber Salsa

- 1/2 medium red onion
- 1 can Rotel (well drained)
- 2 Tbsp vinegar
- 1 pkg powdered dry Ranch dressing mix
- 1/2 bunch fresh cilantro (can used dried)
Brown sugar Oatmeal Cookies

- 1 cup salted butter, softened
- 2 cups packed dark brown sugar
- 2 tsp vanilla
- 2 eggs
- 1 1/2 cups flour
- 1 tsp salt
- 1/2 tsp baking soda
- 3 cups old fashioned oats
Diner Style Home Fries

Place the potatoes and one Tbsp of the butter in a microwave safe bowl
- 2 1/2 lbs red potatoes, washed and 3/4" diced
- 1/2 cup butter
- salt and pepper to taste
- 1/2 tsp garlic salt
- NOTE: Do not use russet potatoes for fried potatoes.
Whipped Butter

Allow butter sticks to come to room temperature in a medium sized mixing bowl
- 2 sticks real butter (1 cup) - do not substitute margarine
- 1 cup of canola or olive oil
- 1/2 tsp salt
Chicken Parmesan

Mix the first 7 ingredients in a shallow dish or pie pan
- 1/2 cup freshly grated parmesan cheese, 2 ounces
- 1 tablespoon fresh parsley
- 1/2 teaspoon basil
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Pinch garlic powder
- 3 boneless chicken breasts, pounded thin
- 1/4 cup butter, melted
- 3 tablespoons spaghetti sauce
- 3 ounces mozzarella cheese, shredded
