Chicken, Ham, and Cheese Roll-Ups

Heat broiler, with rack set 4 inches from heat
- 8 thin chicken cutlets (about 1 1/2 pounds total)
- Coarse salt and ground pepper
- 2 tablespoons honey mustard
- 4 slices deli ham (about 4 ounces total), halved lengthwise
- 12 thin slices Swiss cheese (about 4 ounces total), halved lengthwise into 24 strips
Twice-baked Potato Casserole

Heat oven to 350. Lightly coat a shallow 3-quart baking dish with non-stick spray
- 5 lb potatoes, peeled and quartered
- 1/2 stick (4 Tbsp) margarine
- 6 oz cheddar cheese
- 2 cups sour cream
- 2 eggs
- 4 sliced bacon, cooked crisp and crumbled
- 2 1/2 tsp salt
- 1/2 tsp pepper
Broccoli Potato Soup

Place chopped broccoli in medium sized saucepan
- 1 lb fresh broccoli, chopped
- 2 12 oz cans evaporated milk
- 2 cans cheddar cheese soup
- 2 can cream of potato soup
- 1 to 2 cups cubed Velvetta cheese
Breakfast Pizza

Place dough on bottom of 12” round pizza pan
- 1 –8 oz crescent dinner rolls
- 1 – 12 oz sausage, cooked and drained
- 2 cups frozen hash browns
- 3 eggs
- 1/4 cup milk
- 1 cup shredded cheddar cheese
Iced Pumpkin Cookies

Preheat oven to 350. Combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt; set aside
- GLAZE:
- 2 1/2 cups flour
- 1 cup canned pumpkin puree
- 1 tsp baking powder
- 1 egg
- 1 tsp baking soda
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp salt
- 1/2 cup butter
- 1 1/2 cup sugar
- 2 cups confectioners’ sugar
- 1 Tbsp melted butter
- 3 Tbsp milk
- 1 tsp vanilla
Low-Carb Meatloaf

Preheat oven to 350 degrees
- 2 lbs. extra lean ground beef
- 8 oz can of tomato sauce
- 3 T soy sauce (I use low sodium/lite soy sauce)
- 1 T onion powder
- 1 T dried parsley
- ground black pepper to taste
- 4 cloves of garlic, minced
- 2 whole eggs (or Egg Beaters)
- 1/2 c Parmesan cheese (you want the powdery kind, like Kraft in a can, not shreds. This is the binder).
- 1 piece of raw bacon -cut up as fine as you can
"Meatball Sub"

Heat oven to 425 degrees. Line a rimmed baking sheet with nonstick foil
- 1/2 cup Italian bread crumbs
- 1/4 cup water
- 1 large egg
- 2 Tbsp dried minced onion
- 1 tsp Italian seasoning
- 1 lb ground beef
- 24-26 oz jar of spaghetti sauce
- 4 Hero Rolls
- 1 cup mozzarella cheese
Cheesy Chicken

- 4 Boneless, skinless chicken breasts
- 1 can Chicken Mushroom Soup
- 2/3 cup beef broth
- 1/4 cup Parmesan cheese
- 1/8 tsp garlic powder
- 1/4 tsp poultry seasoning
- 1/8 tsp pepper
- 1/2 Tbsp parsley flakes
- 2 Tbsp Butter, melted
- 1 oz nuts, sliced almonds or whole cashews
- 1/4 cup Mozzarella cheese
Chicken Supreme

In a large, non-stick skillet, cook bacon until crisp
- 3 slices bacon
- 6 boneless, skinless chicken breast halves
- 4 oz jar sliced mushrooms, drained
- 1 can cream of chicken soup
- 1/2 cup shredded swiss cheese
Peanut Butter Crunch

- 1 package Almond Bark
- 1 cup crunchy peanut butter
- 2 cups cocktail peanuts
- 2 cups mini marshmallows
- 4 cups Rice Krispies
