Fish, Asparagus & Potatoes

Salt potatoes in a large steamer set over a pot of boiling water
- 250 ml red potatoes, quartered 1 cup
- 250 ml asparagus, sliced 1 cup
- 2 fish fillets 2
- 75 ml tomatoes, quartered 1/3 cup
- 1 ml dried basil or tarragon 1/4 tsp
- 5 ml butter 1 tsp
- 5 ml lemon juice 1 tsp
- salt & pepper to taste -
Watergate Salad

COMBINE first 4 ingredients in large bowl
- 1 can (20 oz.) crushed pineapple in juice, undrained
- 1 pkg. (3.4 oz.) JELL-O fatfree, sugar free Pistachio Flavor Instant Pudding
- 1 cup JET-PUFFED Miniature Marshmallows
- 1/2 cup chopped PLANTERS Pecans
- 1-1/2 cups thawed COOL WHIP Whipped Topping
Stuffed Italian Bread

Preheat the oven to 350 F
- 1 Italian loaf, about 12 inches long
- 1 stick butter, melted
- 1/8 cup olive oil
- 3 tsp minced onion
- 2-3 cloves garlic, grated
- 1 tbsp dijon mustard
- 1 tbsp poppy seeds
- 3 tsp chopped parsley (add more if you wish)
- 12 oz grated cheese
- (I used a mix of white cheddar and monterey jack.)
- Preheat the oven to 350 F.
Orzo with Tomatoes

Cook orzo in boiling water until al dente
- 1 cup orzo
- 2 plum tomatoes, cored and chopped
- 1/4 cup chopped fresh parsley
- 1 tablespoon butter
- 1 tablespoon fresh lemon juice
Skillet-baked Chocolate Chip Cookie

Preheat oven to 350 degrees
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1/2 cup sugar
- 3/4 cup packed light-brown sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1 1/2 cups (about 9 ounces) mixed milk- and semisweet chocolate chips
- 2 pints vanilla ice cream
Chicken with Tomato Herb Pan Sauce

Directions: Season both sides of the chicken breasts with salt and pepper
- For the chicken:
- 2 boneless, skinless chicken breasts, butterflied and halved (4 halves total)
- Salt and pepper
- 3/4 cup flour
- For the sauce:
- 2 tbsp. unsalted butter, softened
- 1 clove garlic, minced
- 1 1/2 tsp. fresh oregano, minced
- 1/2 tsp. sweet paprika
- Salt and pepper
- 2 tsp. olive oil
- 2 cups cherry or grape tomatoes (about 12 oz.)
- 1/3 cup dry white wine or chicken broth
- 1 tbsp. minced fresh parsley

Heat oven to 425'F. Bake pie shell 6-8 minutes
- 1 Deep dish pie shell (9")
- 6 Eggs
- 1 C Whipping cream
- 1/8 tsp pepper
- 1 can SPAM Luncheon Meat, cubed
- 1/4 C Chopped onion
- 2 C Shredded Swiss cheese,
- -divided
Creamy Lemon Squares

Preheat oven to 350 degrees
- 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
- 1/2 cup confectioners' sugar, plus more for dusting
- 1/4 teaspoon salt
- 1 cup all-purpose flour (spooned and leveled)
- 4 large egg yolks
- 1 can (14 ounces) sweetened condensed milk
- 3/4 cup fresh lemon juice (from about 3 lemons)
Denver Omelet

In a medium mixing bowl, beat egg whites with electric mixer on medium to high speed until frothy
- 4 egg whites
- 2 TBLS water
- 4 egg yolks, beaten
- salt & pepper to taste -
- 1 TBLS butter
- 1 C fresh mushrooms, sliced
- 3/4 C green pepper, chopped
- 1/2 C green onion, sliced
- 1/4 tsp dried basil, crushed
- 1/2 C cooked ham, cut into juliene strips
- 1/2 C cherry tomatoes, halved or quartered
Shrimp, Avocado, Lime Salad

In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper
- 1 lb jumbo cooked shrimp, peeled and deveined, chopped* (Weight after shrimp has been peeled.)
- 1 medium tomato, diced
- 1 hass avocado, diced
- 1 jalapeno, seeds removed, diced fine
- 1/4 cup chopped red onion
- 2 limes, juice of
- 1 tsp olive oil
- 1 tbsp chopped cilantro
- salt and fresh pepper to taste
