Pork and Chive Potstickers

1.) In a bowl, combine pork, chives, soy sauce, sherry, ginger, sesame oil, cornstarch, and 4 T water
- 1 lb ground pork
- 4 T minced chives
- 2 T soy sauce
- 2 T dry sherry
- 4 tsp minced, peeled ginger
- 2 tsp sesame oil
- 2 tsp cornstarch

- 4 T vegetable oil
Crispy Chicken Tacos

Rinse chicken breast in cold water and add to a large pot
- 4 lbs. chicken breasts
- 5 garlic cloves, smashed
- 2 T. kosher salt
- 2 lbs. tomatoes
- 8 black peppercorns
- 1/2 c. roughly chopped white onion
- 2 T. corn oil
- 3/4 cup heavy cream
- 1/4 cup bread crumbs
- 10 corn tortillas, heated
Chopped Chickpeas Sandwich With Roasted Red Peppers, Black Olives, Lemon Confit, and Parsley

Marinated Chickpeas: 1. If using dried chickpeas, soak the chickpeas in water overnight and drain
- Marinated Chickpeas:
- 2 cups marinated chickpeas
- 8 slices bread
- 1/2 cup roasted red peppers
- 4 tablespoons pitted and chopped Nicoise olives
- 12 slices lemon confit
- 1 cup flat-leaf parsley leaves
- Freshly ground black pepper
- 3 cups dried chickpeas, or 4 cups drained canned chickpeas
- 2 tablespoons plus 1 cup extra-virgin olive oil
- 1 yellow onion, quartered
- 1 celery stalk, cut in half, plus 1 cup finely diced celery
- 2 medium carrots, peeled and halved
- 4 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Kosher salt and freshly ground black pepper
- 1 cup finely diced red onion
- 1 cup red wine vinegar
- 2 garlic gloves, crushed and peeled
- 1/2 teaspoon chopped peperoncini, or 1/4 teaspoon cayenne pepper
- 2 tablespoons chopped fresh oregano, or 1 tablespoon dried Sicilian oregano
- 1 cup finely chopped flat-leaf parsley
- Zest and lemon juice from 1 lemon
- Lemon Confit:
- 12 lemons
- 5 shallots, peeled and minced
- 6 garlic cloves, minced
- 2/3 cup kosher salt
- 1/3 cup sugar
- 4 About 4 cups extra-virgin olive oil
Date Chutney

1.) In a medium saucepan, heat oil over medium-high heat
- 2 tsp vegetable oil
- 2 small shallots, minced
- 1/2 tsp chopped pitted dates (4 oz.)
- 1/2 c. golden raisins
- 2 T light brown sugar
- 1/4 c. cider vinegar
- pinch of cayenne pepper
- 1 tsp. coarse salt

1. Mix Bisquick, milk, sugar, and margarine until soft dough forms
- 2 1/3 c. Bisquick
- 1/2 c. milk
- 3 T. sugar
- 3 T. margarine or butter, melted

Chicken with Mushrooms in Garlic White Wine Sauce

1.) Cook noodles according to package directions, omitting salt and fat
- 4 oz uncooked medium egg noodles
- 2 T flour, divided
- 1/2 tsp salt, divided
- 1/4 tsp black pepper, divided
- 1 lb skinless, boneless chicken breast, cut into 1-inch pieces
- 2 T olive oil, divided
- 1 T minced garlic
- 1/2 tsp dried tarragon
- 1 (8 oz) pkg presliced mushrooms
- 1/2 c. dry white wine
- 1/2 c. fat-free, less-sodium chicken broth
- 1/4 c. shaved fresh parmesan cheese

- 3 c. quick-cooking oats
- 1 (14 oz) can sweetened condensed milk
- 2 T. butter, melted
- 1 c. coconut
- 1 c. mini semisweet chocolate chips
