1. Cream cheeses. Add sugar, continually beating 2
- 1 lb cottage cheese, creamed
- 1 lb cream cheese
- 1 1/2 cups sugar
- 4 eggs
- juice of 1/2 lemon
- 1 tsp vanilla
- 3 T flour
- 3 T cornstarch
- 1 stick butter melted
- 1 pint sour cream
- strawberry or raspberry preserves if desired
Black Bean and Avocado Wraps

1. Heat oil in a large pan over medium/high heat
- For the beans
- 1 1 1 tablespoon oil
- 1/2 1/2 1/2 cup onion chopped
- 1/2 1/2 1/2 cup bell pepper chopped
- 1 1 1 clove garlic minced
- 1 1 1 can black beans drained
- 1/2 1/2 1/2 tsp cumin
- 1/2 1/2 1/2 tsp paprika
- 1/2 1/2 1/2 tsp chili powder
- 1/4 1/4 1/4 tsp garlic powder
- 1/4 1/4 1/4 tsp black pepper
- 1/4 1/4 1/4 tsp salt
- For the avocado salsa
- 1 1 1 avocado pitted and chopped
- 1 1 1 small tomato chopped
- 2 2 2 tablespoons parsley minced
- 1 of 1 lime
- to and pepper to taste
- 6 6 6 medium tortillas
- 1/4 1/4 1/4 cup sour cream or mayo or skinny chipotle sauce

1.) Sprinkle yeast over water and stir til dissolves
- 1 1/2 c. warm water
- 1 pkg yeast
- 2 T oil
- 1 1/2 tsp salt
- 1 tsp sugar
- 4 c. flour
- 1/4 c. olive oil
Oatmeal Raisin Cookies

1. Cream butter and margarine
- 1/2 cup margarine (1 stick)
- 1/2 cup butter (1 stick)
- 1 1/2 cups light brown sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking soda
- 2 T hot water
- 3 cups quick cooking oats
- 2 cups flour
- 1 tsp salt
- 1 1/2 cups raisins
Boiled Egg, Seared Asparagus & Pickled Onion Sandwiches

Hard boil the eggs and set aside
- 1/2 a bunch of asparagus spears (about 15-20 spears)
- 2 small baguettes (or one large one and you'll have bread leftover)
- 2 eggs, hard boiled (or poached depending on your preference)
- 2 tablespoons olive oil
- 2 tablespoons diced raw onion
- 2 tablespoons French mustard
- 1/4 cup red wine vinegar
- lemon juice to taste
- fresh dill
- salt and pepper
