Healthy Banana Bread

1. Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and grease a 9×5-inch loaf pan
- 1/3 cup melted coconut oil or extra-virgin olive oil or high quality vegetable oil*
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 cup mashed ripe bananas (about 2 1/2 medium or 2 large bananas)
- 1/4 cup milk
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon, plus more to swirl on top
- 1 3/4 cups white whole wheat flour or regular whole wheat flour

- 2 c. reduced fat milk
- 2/3 c. basmati rice
- 1/4 c. sugar
- 1/2 c. sweetened flaked coconut

Chicken Lettuce Wraps

1. Heat olive oil in a saucepan over medium high heat
- 1 tablespoon olive oil
- 1 pound ground chicken
- 2 cloves garlic, minced
- 1 onion, diced
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce Coupons
- 1 tablespoon rice wine vinegar
- 1 tablespoon freshly grated ginger

- 1 medium onion, chopped

- 1 teaspoon chopped fresh rosemary leaves

Lemon Garlic Shrimp Caesar Salad

1. Preheat the oven to grill/broil settings on medium - high heat
- Dressing:
- 1/4 cup cubed ciabatta or sourdough (or store bought croutons)
- 1 pound large raw shrimp (prawns), peeled and deveined, tails intact
- Juice of 1/2 a large lemon
- 1 tablespoon minced garlic
- Pinch of salt
- Cracked pepper, to taste
- 1/4 cup diced bacon
- 1 egg, soft boiled (or poached)
- 4 cups Romaine lettuce, leaves washed and dried
- 1/2 an avocado, sliced
- 1/4 cup shaved parmesan cheese
- 1/4 cup plain, non fat greek yogurt
- 1 tablespoon mayo
- 1/2 tablespoon olive oil
- 1 garlic clove, crushed (or 1 teaspoons minced garlic)
- 1 anchovy fillet, finely chopped or minced
- 1 tablespoon lemon juice
- 1 1/2 tablespoons freshly grated parmesan cheese

1. Sift flours, baking soda, baking powder and salt into a bowl and set aside
- 2 cups minus 2 tablespoons cake or all purpose flour
- 1 2/3 cups bread flour
- 1 1/4 tsp baking soda
- 1 1/2 tsp baking powder
- 1 1/2 tsp coarse salt
- 2 1/2 sticks (1 1/4 cups) unsalted butter
- 1 1/4 cups light brown sugar
- 1 cup plus 2 tablespoons granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/4 pounds chocolate chips
