Mustard Milanese with an Arugula Fennel Salad

- Chicken:
- 2 boneless skinless chicken breasts
- 1/2 cup flour
- 1 large egg white
- 2 T smooth dijon mustard
- 2 garlic cloves, minced
- 1 tsp oregano
- 1/2 tsp lemon zest
- 1 1/2 cups panko
- Salad:
- 3 T. lemon juice (from 1 large lemon)
- 2 T. coarse dijon mustard
- 1 T. smooth dijon mustard
- 1/4 cup olive oil, plus more for frying
- 5 oz arugula
- 1 small fennel, sliced thin
Olive Tapenade

1. Roast garlic by coating in oil and roasting in oven @ 325 until brown
- 2 cans black olives, drained
- 1 jar green olives, drained
- 6 roasted garlic cloves
- 4-6 dried tomatoes
Chicken and Black Bean-Stuffed Burritos

1. Bring first 6 ingredients to a boil in a small saucepan
- 1/4 c. water
- 2 T fresh lime juice
- 1/2 tsp chili powder
- 1/4 tsp ground cumin
- 1/4 tsp black pepper
- 1/8 tsp ground red pepper
- 2 c. shredded rotisserie chicken breast
- 1/4 c. thinly sliced green onions
- 3/4 c. canned black beans, rinsed and drained
- 1 avocado, peeled and diced
- 1/2 c. refrigerated fresh salsa
- 4 (8-in) flour tortillas
- 1/2 c. shredded Monterey Jack cheese
Bacon Rye Crisps

Mix together and spread on top of party rye crisps and broil until hot and bubbly
- 1 cup mayo.
- 1/2 cup parm. cheese
- 3 TB. chopped onion
- 1/2 lb. fried bacon, chopped
- Party Rye crisps
Steak Au Poivre

Rinse and pat dry the steaks
- 4 (8 oz) skirt steaks
- 10 springs parsley
- 6 sprigs thyme
- 2 cups red wine
- Coarsely ground black pepper
- 1 T canola oil
- 4 oz brandy
- 4 oz heavy cream
- 1/2 cup (1 stick) unsalted butter
- Salt, to taste
Baked Brie

Mix ingredients. Split brie and put filling in middle
- 1 round or 2 small brie
- 1 T honey
- 2 T brown sugar
- 2 T raspberry jelly
Breakfast Tortilla

1.) Preheat oven to 350 2
- 1/2 lb Yukon gold potato (about 1 med)
- 1 T minced fresh chives, divided
- 1 scallion, sliced
- 3/4 tsp salt, divided
- 1/2 tsp ground black pepper
- 4 large eggs
- 1 large egg white
- 1 T olive oil
- 1 garlic clove, minced
- 3 T grated Parmesan
- 1 tsp extra-virgin olive oil
- 1/2 c. halved grape or cherry tomatoes
Banana Oatmeal Chocolate Chip Cookies

1. Preheat oven to 350 2
- 1/2 c. mashed ripe banana (about 1 med)
- 1/2 c. packed brown sugar
- 1/4 c. butter, softened
- 1/4 c. sugar
- 1 tsp. vanilla extract
- 1 large egg
- 1 1/4 c. flour
- 2 c. old-fashioned oats
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. semisweet chocolate chips
Sparkling Cranberry Punch

Combine first two ingredients
- 1 bottle (32 oz) cranberry juice cocktail
- 1 can (6 oz) frozen pink lemonade concentrate, thawed
- 1 bottle (2 liters) ginger all or 2 bottles (750 ml each) champagne

- 4 tomatoes, chopped
- 3 cucumbers, chopped
- 1 green bell pepper, diced
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 1 jalapeno, minced
- 1 large can diced tomatoes
- 1/4 c. + 1 T lime juice
- 1/4 c. olive oil
- 1/4 c. scallions
