Baked Salmon with Lemon and Dill

Preheat over to 400. Brush both sides of fish with oil
- 4 salmon fillets
- 1 T vegetable oil
- Salt and pepper to taste
- 4 large sprigs fresh dill or 1 t dried dill
- 1 lemon, sliced
Slow Cooker Cola BBQ Pork

In a medium bowl, stir together cola and ketchup
- 1 cup cola
- 1/2 cup ketchup
- 1 T salt
- 1 T garlic powder
- 1 T smoked paprika
- 1 T onion powder
- 1 1/2 t ground red pepper
- 1 5 1/2 lb bone-in Boston butt
- 1 T vegetable oil
- BBQ sauce for serving
Collards with Bacon and Onions

Cook bacon. Remove from pan leaving 4 T bacon grease
- 1 pound bacon
- 3 red onions, chopped coarsely
- 1 1/4 cup chicken stock
- 1/4 cup brown sugar
- 2 T cider vinegar
- 1/2 - 1 t red pepper flakes
- 2-3 bunches of collards, washed and chopped (no stems)
- 1-2 bunches kale, washed and chopped (no stems)
Fruit Smoothie

Add ingredients to a blender and blend until smooth
- 1 cup coconut water
- 1 cup organic soy milk
- 1 frozen banana
- 1/2 cup berries
Beef and Cabbage Skillet Supper

- 2 T canola oil
- 1 lb ground beef sirloin
- 1 1/2 t kosher salt
- 3/4 t ground cinnamon
- 3/4 t ground coriander
- 1/2 t freshly ground pepper
- 1 head green cabbage, cored and chopped
- 1 white onion, sliced
- 1/2 cup golden raisins
- 1/4 cup canned tomato puree
- 2 T chopped fresh flat leaf parsley
- Rice for serving
Clam Puffs

Mix together and heap mixture onto toast rounds/party rye bread and broil
- 1 (3 oz) package cream cheese
- 2 T heavy cream or milk
- 1 cup minced clams
- 1/4 t dry mustard
- 1 t Worcestershire sauce
- 1/4 t salt
- 1/2 cup grated onion or onion juice
- Toast rounds / Party Rye bread
Quick Shrimp Chowder

Melt butter in large pot. Add onion and saute 8 minutes or until tender
- 2 T butter
- 1 med onion, chopped
- 2 (10 3/4 oz) cans cream of potato soup
- 3 1/2 cups milk
- 1/4 t ground red pepper
- 1 1/2 lbs med frozen shrimp, thawed
- 1 cup shredded Monterey Jack cheese
- Garnish: chopped fresh parsley, oyster crackers
Thumbprint Cookies

Preheat oven to 350 Cream shortening, butter, and sugar together
- 1/2 cup shortening
- 1/2 cup butter
- 1/2 cup sugar
- 2 eggs, separated
- 2 T grated orange rind
- 1 T grated lemon rind
- 1 t vanilla
- 2 T lemon juice
- 2 cups sifted flour
- 1 1/4 cup walnuts, finely chopped
- Maraschino cherries, drained, dried, and cut in quarters
Slow Cooker Chicken Cacciatore

In the slow cooker, whisk together the broth and tomato paste
- 1 cup chicken broth
- 1 6 oz can tomato paste
- 2 1/2 lbs bone-in chicken thighs, skin removed
- 1 red bell pepper, seeded and sliced
- 12 oz cremini mushrooms, cut in half
- 1 med onion, chopped
- 2 cloves garlic, crushed
- 12 small sprigs rosemary
- salt and pepper to taste
- capers for garnish
Monkey Bread

Combine sugar and cinnamon in a small bowl and set aside
- Glaze:
- 6 T butter
- 3/4 cup brown sugar
- Bread:
- 3 cans Publix Butter Me Not biscuits
- 2 cups sugar
- 4 T cinnamon
- Pancake syrup
- Chopped and whole pecans
